First, let’s prepare the beautiful purple potatoes. Aren’t they a stunning color? (For this recipe, I used some purple potatoes shared by a neighbor.)

Even after peeling, the flesh of the purple potatoes remains a vibrant purple, which is truly fascinating and attractive. They’ll look even more wonderful when stir-fried.

Now, we’ll thinly julienne the purple potatoes. Slicing them not too thickly will result in a better texture when stir-fried.

To remove excess starch from the julienned purple potatoes and enhance their color, soak them in cold water for about 10 minutes. You’ll notice the water slightly turning purplish.

After soaking, drain the julienned purple potatoes thoroughly in a colander. Any remaining moisture can cause them to clump together during stir-frying.

Next, prepare the onion. Onions will add sweetness and depth of flavor to the dish.

Julienne the onion similarly to the purple potatoes, aiming for a similar thickness. Cutting them too thick might lead to uneven cooking.
