Main Ingredients
  • 2 bowls of warm cooked rice
  • 240g pork belly (cut into bite-sized pieces)
  • 1/2 burdock root (approx. 100g, peeled and julienned)
  • 2 eggs (fried to your preference)
  • A pinch of sesame seeds (for garnish)
  • 1 Tbsp chopped green onion
  • 1 Tbsp cooking oil

Flavorful Sauce
  • 2 Tbsp soy sauce
  • 2 Tbsp cooking wine (mirin)
  • 1 Tbsp sugar (adjust to taste)
  • 1 Tbsp minced garlic

Cooking Instructions

Step 1

First, let’s prepare the burdock root. Wash the burdock root thoroughly and use the back of a knife to peel off the skin. Then, julienne it into strips about the thickness of a spoon handle. Julienne pieces will absorb the sauce well and provide a pleasant texture.

Step 2

Now, let’s cook the pork belly, the star of this delicious dish. Heat 1 tablespoon of cooking oil in a pan over medium-high heat. Add the bite-sized pieces of pork belly and cook until nicely browned and some fat has rendered out.

Step 3

Once the pork belly is about halfway cooked and has released some fat, add the julienned burdock root to the pan. Stir-fry them together. The burdock root will absorb the delicious pork fat, adding a wonderful savory flavor. Continue to stir-fry until the burdock root becomes slightly translucent.

Step 4

When the pork belly and burdock root are well-fried, it’s time to add the sauce for that irresistible flavor. Push the pork and burdock to one side of the pan. Add the minced garlic, sugar, cooking wine, and soy sauce. Let the sauce bubble slightly, then stir everything together to coat the ingredients evenly. Cook over medium-low heat to prevent burning.

Step 5

Continue to simmer until the sauce has thickened and coated the ingredients nicely. Finally, add the chopped green onions and stir-fry for another moment to release their aroma. This will make your pork and burdock topping even more delicious.

Step 6

Spoon the warm cooked rice into a bowl. Generously top the rice with the prepared braised pork and burdock root mixture. You can adjust the ratio of rice to topping according to your preference.

Step 7

Finally, place a fried egg (cooked to your liking, sunny-side up or over-easy) on top, and sprinkle with sesame seeds for an extra touch of flavor and visual appeal. Your delicious Pork and Burdock Root Rice Bowl is ready to be enjoyed!
