Quick Stir-Fried Chives and Eggs (Baek Jong-won Style)

This is an incredibly simple yet satisfying dish featuring chives and eggs, a recipe by the renowned chef Baek Jong-won. It’s a prime example of a super easy dish with outstanding flavor. Enjoy this delightful egg creation!
Main Ingredients
- 1 bunch fresh chives (approx. 100g)
- 2 large eggs
- 4-5 Tbsp cooking oil (e.g., canola, grapeseed)
Sauce
- 1 Tbsp oyster sauce (approx. 15ml)
- 1/2 Tbsp sesame oil (approx. 7.5ml)
- 1/2 Tbsp toasted sesame seeds (approx. 7.5ml)
- 1 Tbsp oyster sauce (approx. 15ml)
- 1/2 Tbsp sesame oil (approx. 7.5ml)
- 1/2 Tbsp toasted sesame seeds (approx. 7.5ml)
Cooking Instructions
Step 1
First, thoroughly wash the fresh chives and drain any excess water. Then, chop them into bite-sized pieces, about 2-3 cm long. (If you’re using green onions instead of chives, their slight pungent flavor will add a lovely depth to the dish. Chop the green onions to a similar length.)
Step 2
Crack the 2 eggs into a bowl. Use a fork or whisk to beat them well until the yolks and whites are fully combined. Do not add any salt or other seasonings to the eggs at this stage; the focus is on highlighting the natural flavors of the ingredients.
Step 3
Heat a frying pan over medium heat. As Chef Baek Jong-won suggests, add a generous amount of cooking oil, about 4-5 tablespoons. Once the oil is hot, carefully pour in the beaten egg mixture. As the eggs begin to set, stir them briskly as if you’re frying them.
Step 4
The eggs will cook very quickly over medium-high heat. Using chopsticks, stir the eggs rapidly in a ‘Z’ pattern, like making scrambled eggs, to prevent them from clumping. Aim for a soft, scrambled texture.
Step 5
When the eggs are about 70-80% cooked, immediately add the chopped chives (or green onions) and stir-fry them together with the eggs. Be careful not to overcook the chives, as they will lose their crispness.
Step 6
Once the chives and eggs are well combined, add 1 tablespoon of oyster sauce around the edges of the pan. The savory umami from the oyster sauce will season the entire dish. Stir everything together and cook for another minute to allow the flavors to meld. (Tip: If you don’t have oyster sauce, you can mix 1 Tbsp soy sauce, 1/2 Tbsp sugar, and 1/2 Tbsp cooking wine (mirin) to achieve a similar taste. A 2:1:1 ratio works well.)
Step 7
Finally, drizzle about 1/2 tablespoon of sesame oil around the edges of the pan to add a nutty aroma. The residual heat will gently release its fragrance. Sprinkle the top with 1/2 tablespoon of toasted sesame seeds for an even richer flavor and appealing look. This delicious chive and egg stir-fry is best enjoyed immediately while warm!
