If you have leftover aged kimchi from the kimchi-making season, try this quick and easy kimchi stew using canned saury. The soup from the canned saury adds a deep flavor, and the tangy kimchi combined with the rich saury makes it an irresistible dish. A touch of plum extract can be added to balance any gamey flavors, resulting in a cleaner taste. Wrap a piece of well-cooked saury with a shred of tender kimchi for a truly delightful bite!
Ingredients
- 1 can (14 oz) Canned Saury (including liquid)
- 1/4 head Aged Kimchi
- 1 Tbsp Gochugaru (Korean chili flakes)
- 1 tsp Minced Garlic
- 2 Tbsp Plum Extract (or syrup)
- 1 Tbsp Sliced Green Onion
Cooking Instructions
Step 1
Roughly chop the aged kimchi into bite-sized pieces, or you can simply add it whole to the pot if it’s not too large. Don’t forget to include the kimchi juice! This kimchi juice is packed with flavor and will form the base of your stew.
Step 2
Open one can of saury and pour both the fish and the liquid directly into the pot. The liquid from the canned saury is rich in flavor and will significantly enhance the stew’s savory profile.
Step 3
Add 1 tablespoon of gochugaru for a pleasant spicy kick, and 1 teaspoon of minced garlic to add depth and aromatic complexity. These seasonings will further enrich the flavors of the kimchi and saury.
Step 4
Pour in enough water to cover the ingredients. If you have anchovy or kelp broth, using it will result in an even richer soup. However, the liquid from the canned saury acts as a good broth base, so plain water is also perfectly fine. Start by bringing the stew to a boil over high heat.
Step 5
Once the stew reaches a rolling boil, reduce the heat to low and let it simmer gently for about 10 minutes. This allows the kimchi to soften and the flavors to meld beautifully. The stew is usually well-seasoned from the kimchi and saury liquid, but if you find it needs more salt, you can add a dash of fish sauce. Adding a bit more plum extract can also help if you detect any fishiness.
Step 6
Your simple and delicious canned saury kimchi stew is ready! Enjoy it by scooping the tender saury and well-cooked kimchi over a bowl of rice, or simply savor it with your meal. You’ve successfully cleared out some of that aged kimchi and prepared a satisfying dish!
