Step 1
First, prepare 300g of beef brisket. Place the brisket in a preheated pan and sear both sides until some of the fat renders out. This step helps to remove excess grease and ensures a cleaner, more delicate flavor in your tteokbokki.
Step 2
Set the seared brisket aside in the pan. Now, let’s prepare the vegetables for the tteokbokki sauce. Mince 1 tablespoon of garlic. Slice the white parts of 1 green onion stalk diagonally. Slice 1/2 medium onion into thin strips.

In the same pan, add the minced garlic, sliced green onion, and onion strips. Stir-fry them together with the beef brisket over medium heat until fragrant and the vegetables begin to soften and turn translucent.

Once the onions are tender and translucent, add 3 tablespoons of gochugaru (Korean chili flakes). Stir-fry quickly over low heat for about 30 seconds to a minute, being careful not to burn it. This toasts the chili flakes, enhancing their flavor and color.

Add 400g of tteokbokki rice cakes to the pan. Now, add the sauce ingredients: 1 tablespoon gochujang (Korean chili paste), 2 tablespoons soy sauce, 1 tablespoon plum extract, 1 tablespoon oligosaccharide, and 1 tablespoon sugar. Pour in 3 cups of water. Stir everything together thoroughly with a spatula to combine.

Bring the mixture to a boil over high heat. Once boiling, reduce the heat to medium-low. Let it simmer for about 5-7 minutes, stirring occasionally, allowing the flavors to meld and the rice cakes to cook through and absorb the sauce.
