Ingredients
- 110g Cake Flour (for a tender crumb)
- 15g Cocoa Powder (for deep chocolate flavor)
- 1 Large Egg (at room temperature)
- 60g Unsalted Butter (softened to room temperature)
- 50g Granulated Sugar
- 1g Baking Powder (for a slight lift)
- 4 Marshmallows (cut in half)
- 1 handful Chocolate Couverture (chips or chunks)
Cooking Instructions
Step 1
Begin by creaming the softened unsalted butter (60g) in a bowl until smooth. Add the granulated sugar (50g) and continue mixing until the mixture is light and fluffy, resembling a cream. This ensures a good base for your cookie dough.
Step 2
Next, add the large egg (1 egg) to the butter-sugar mixture. It’s crucial to add the egg in two separate additions, mixing thoroughly after each addition. This helps to emulsify the mixture and prevent it from separating, resulting in a smoother cookie dough.

In a separate bowl, sift together the cake flour (110g), cocoa powder (15g), and baking powder (1g). Sifting prevents lumps and creates a lighter texture. Add the sifted dry ingredients to the wet ingredients and gently mix with a spatula until just combined. Be careful not to overmix, as this can lead to tough cookies.
Step 4
Once the dough is mostly combined, fold in the handful of chocolate couverture (chips or chunks). You can also add chocolate chips or chopped nuts at this stage for extra texture and flavor. Gently mix them into the dough.

Prepare your marshmallows by cutting each of the 4 marshmallows in half. Take a portion of the cookie dough, flatten it slightly, and place a marshmallow half in the center.
