- 1 Leek
- 1/2 Tbsp Sugar

- 2 Tbsp Soy Sauce
- 2/3 Tbsp Oyster Sauce
- 2 Tbsp Mirin (or Rice Wine)
- 1 Tbsp Oligodang (or Corn Syrup)

Cooking Instructions
Step 1
First, let’s prepare the vegetables. Thinly slice the leek lengthwise into strips about 0.5cm wide. Do the same for the onion, slicing it into similar-sized strips.
Step 2
Now, let’s make the delicious sweet and savory sauce. In a bowl, combine 2 Tbsp soy sauce, 2/3 Tbsp oyster sauce, 2 Tbsp mirin, 1 Tbsp oligodang, and 1 Tbsp minced garlic. Whisk everything together until well combined and smooth.
Step 3
Heat a pan over medium-high heat. Add all the thinly sliced pork belly to the hot pan and start stir-frying. Since the pork belly is very thin, it will cook quickly. Once some of the fat has rendered, add the sliced leeks and stir-fry them together with the pork. The leeks will add a wonderful aroma as they cook in the pork fat.
Step 4
When the pork is partially cooked, add 1/2 Tbsp of sugar. The sugar will caramelize slightly as it cooks with the meat, adding a lovely gloss and depth of flavor. Keep the heat on high and stir-fry the pork and sugar quickly.
Step 5
It’s important to get the pork belly crispy at this stage! Frying it until it’s slightly crisp will maintain a pleasant chewiness after adding the sauce and prevent the dish from becoming watery. Once the pork is sufficiently crispy, add the sliced onions and stir-fry them briefly until they just begin to soften. Avoid overcooking the onions.
Step 6
Now, pour the prepared sauce mixture into the pan with the pork and vegetables. Reduce the heat to medium-low and stir-fry everything thoroughly, allowing the sauce to coat the meat and vegetables evenly. Stir occasionally to prevent sticking.
Step 7
Once the sauce has thickened and coated the ingredients well, turn off the heat. Finish by drizzling a little sesame oil for added fragrance and sprinkling some sesame seeds over the top. Adding sesame oil and seeds after turning off the heat preserves their aroma.
