Cooking Instructions

Step 1

Today, we’ll be making Katsudon using convenient store-bought frozen tonkatsu. Please prepare good quality tonkatsu.

Step 2

To make the tonkatsu extra crispy, we’ll use an air fryer. Lightly spray the air fryer basket with cooking oil, place the tonkatsu on it, and cook for 8 minutes in a preheated air fryer at 200°C (392°F).

Step 3

After 8 minutes, flip the tonkatsu and lower the temperature to 180°C (356°F). Cook for an additional 5 minutes. This will ensure the tonkatsu is heated through and the exterior becomes even crispier.

Step 4

The tonkatsu is golden brown and perfectly cooked! Doesn’t it look delicious and tempting? Now, it’s time to make the sauce.

Step 5

We’ll be making the sauce for one serving, referencing Baek Jong-won’s recipe. You’ll need 1 egg, 1/2 onion, 3 Tbsp soy sauce, 1 Tbsp sugar, 3 Tbsp mirin, and 9 Tbsp water. While Baek Jong-won’s original recipe suggests adding all ingredients and then the onion, I prefer to sauté the onion first to enhance its sweetness. Sautéing the onion well brings out a lovely sweetness and depth of flavor.

Step 6

In a deep pan or pot, combine the soy sauce, water, sugar, and mirin. Bring it to a boil over medium heat. Once the sauce is boiling, add the sautéed onions and let them simmer together.

Step 7

When the sauce comes to a rolling boil, carefully pour in the lightly beaten egg. The key to a tender egg texture is to gently swirl it with a chopstick, just enough to break the yolk and white slightly without fully scrambling it. Simmer for a moment longer until the egg is cooked, and your delicious Katsudon sauce is ready!

Step 8

Spoon a generous portion of warm rice into a serving bowl. Arrange the crispy, sliced tonkatsu over the rice. Finally, pour the delicious sauce generously over the tonkatsu and rice. Your mouth-watering Katsudon is complete!
