Spicy and Sweet Tteokbokki (Emergency Room Style)
Golden Ratio Recipe for Deliciously Spicy Tteokbokki (Emergency Room Tteokbokki Version)
You won’t need to buy tteokbokki anymore. Seriously! This recipe is for 2 servings.
Main Ingredients
- 200g Tteokbokki Rice Cakes (Soak in water beforehand for a softer texture)
- 3 sheets of Fish Cakes (Cut into bite-sized pieces)
- 1/6 Cabbage (Cut into large pieces)
- 10 Frozen Dumplings (Prepare according to your preference)
- A little Green Onion (Slice diagonally)
- 500ml Anchovy Broth (Adds a fundamental savory base)
Seasoning (Tablespoon Standard)
- 1 Tbsp Gochujang (Korean chili paste – the base of tteokbokki flavor)
- 2 Tbsp Spicy Gochugaru (Korean chili flakes – essential for that fiery kick!)
- 2 Tbsp Soy Sauce (Adds umami and depth)
- 1 Tbsp Sugar (Balances the spiciness with sweetness)
- 1 Tbsp Corn Syrup (or Oligosaccharide – for gloss and smooth sweetness)
- 1 Tbsp Gochujang (Korean chili paste – the base of tteokbokki flavor)
- 2 Tbsp Spicy Gochugaru (Korean chili flakes – essential for that fiery kick!)
- 2 Tbsp Soy Sauce (Adds umami and depth)
- 1 Tbsp Sugar (Balances the spiciness with sweetness)
- 1 Tbsp Corn Syrup (or Oligosaccharide – for gloss and smooth sweetness)
Cooking Instructions
Step 1
Soak the tteokbokki rice cakes in water for about 30 minutes before cooking. This step ensures they become delightfully chewy and soft. While the rice cakes soak, prepare your vegetables: cut the cabbage into large pieces, slice the fish cakes into bite-sized portions, and diagonally cut the green onions.
Step 2
Now, let’s create the heart of our tteokbokki – the sauce! In a bowl, combine 1 tablespoon of gochujang, 2 tablespoons of spicy gochugaru, 2 tablespoons of soy sauce, 1 tablespoon of sugar, and 1 tablespoon of corn syrup (or oligosaccharide). Mix them thoroughly. If you crave an intensely spicy and invigorating flavor, using ‘spicy’ gochugaru is highly recommended!
Step 3
In a wide pot, add the soaked rice cakes, prepared dumplings, sliced fish cakes, and cabbage. Pour the pre-mixed sauce and 500ml of anchovy broth over the ingredients. Ensure everything is well-coated with the broth and sauce.
Step 4
Begin cooking over high heat. Once the broth starts to boil vigorously, reduce the heat to medium.
Step 5
When the rice cakes and other ingredients are partially cooked, add the sliced green onions. Then, reduce the heat to low. From this point onwards, stir occasionally for about 10 minutes to prevent the rice cakes from sticking to the bottom of the pot. This slow simmering allows the flavors to meld beautifully and the rice cakes to absorb the delicious sauce. Continue cooking until the sauce thickens slightly and the rice cakes are tender.
Step 6
Voila! Your delicious, spicy, and sweet tteokbokki is ready. Just looking at it makes your mouth water!
