Main Ingredients
  • 300g Pork Belly (thinly sliced frozen pork belly recommended)
  • 300g Tofu (about 1 block)
  • 1/2 Onion
  • 1/4 Green Onion
  • 2 Korean Green Chilies (Cheongyang peppers)
  • 200ml Water

Seasoning Sauce
  • 0.5 Tbsp Sugar
  • 3 Tbsp Gochugaru (Korean chili flakes)
  • 2 Tbsp Soy Sauce (Jin-ganjang)
  • 1 Tbsp Fish Sauce (Aekjeot)
  • 3 Tbsp Cooking Wine (Mirin)
  • 0.5 Tbsp Gochujang (Korean chili paste)
  • A pinch of Black Pepper (approx. 0.1 Tbsp)

Cooking Instructions

Step 1

First, cut the tofu into bite-sized pieces, about 2-3 cm square. Slice the onion into long, thin strips; they will soften nicely as they cook. Finely chop the green onion and Korean green chilies.

Step 2

Prepare a wide, shallow pot or a deep frying pan. Arrange the sliced tofu and onions at the bottom of the pot. Layering enough onions can help prevent the tofu from sticking to the bottom.

Step 3

Place the prepared 300g of pork belly evenly over the tofu and onions. (Tip: Using thinly sliced frozen pork belly cooks faster and allows the sauce to penetrate better, making it even more delicious.)

Step 4

Now it’s time to make the key seasoning sauce for the stew. In a small bowl, combine all the ingredients listed in the seasoning sauce recipe above and mix well. This is your golden ratio blend of sugar, gochugaru, soy sauce, fish sauce, mirin, gochujang, and pepper.

Step 5

Pour the prepared sauce into the center of the pot over the ingredients. Avoid spreading it to the edges of the pot with a spoon or spatula; pour it in the middle so the sauce concentrates on the ingredients.

Once the sauce looks appealingly placed, carefully pour the 200ml of water around the edges of the pot. This helps prevent the sauce from burning and keeps the ingredients moist as they cook.

Cover the pot and bring it to a boil over high heat. As soon as it starts bubbling vigorously, reduce the heat to low. Once on low heat, remove the lid and use a spatula or ladle to scoop the broth from the bottom and spoon it over the ingredients. Continue to simmer like this for about 7-8 minutes. This process allows the sauce to fully infuse into the ingredients, creating a deep flavor.
