Main Ingredients
- 1 can tuna (approx. 50g)
- 1/2 bowl of well-fermented napa cabbage kimchi (approx. 200g)
- A little bit of green onion, thinly sliced
- 300ml water (approx. 1.5 cups)

- 0.7 Tbsp vinegar
- 1 Tbsp red pepper flakes (gochugaru)
- 0.5 Tbsp minced garlic
- 2 ladles of kimchi brine (approx. 100ml)

Step 1

Step 2
To reduce the raw taste of the kimchi and enhance its umami, drizzle 0.7 Tbsp of vinegar over the aged kimchi and let it sit for 10 minutes. Then, place the marinated kimchi in a pot and stir-fry over medium heat for about 5 minutes until the kimchi becomes tender and glossy. This stir-frying process softens the kimchi’s sourness and deepens its flavor.
Step 3
Once the kimchi is softened, add 1 can of tuna (approx. 50g), drained of excess oil, and stir-fry together with the kimchi for another minute. Stir-frying the tuna adds an even deeper flavor to the stew.

Now, add 300ml of water, which will form the base of the stew. Using rice water instead of plain water will result in a richer and more savory taste.
Step 5
Add 2 ladles (approx. 100ml) of the flavorful kimchi brine to enhance the depth of the stew’s taste. Adjust the amount of kimchi brine according to the saltiness of your kimchi and your preference.

Add 0.5 Tbsp of minced garlic for added savory flavor and mix well. Minced garlic plays an important role in removing any gamey smell from the stew and enhancing its aroma.
