Kimchi stew is one of the most frequently cooked soup dishes, right after soybean paste stew! As long as you have delicious kimchi, anyone can make a tasty stew. Today, we’ll use Baek Jong-won’s recipe to create an even more flavorful tuna kimchi stew, enhanced with rice water for a richer broth. Basic Ingredients
- 1 can Tuna (135g)
- 1 cup Aged Kimchi (including juice)
- 1 stalk Green Onion
- 1/2 Onion
- 1 King Oyster Mushroom
- 1 Tbsp Minced Garlic
- 800ml Rice Water
Seasoning Ingredients
- 1 Tbsp Soy Sauce for Soup
- 1/3 Tbsp Sugar
- 1/4 Tbsp Sea Salt
- 1 Tbsp Soy Sauce for Soup

Cooking Instructions
Step 1
First, prepare 1 can (135g) of tuna and 1 cup of aged kimchi. Adding a little kimchi juice will enhance the savory flavor.
Step 2
Slice the green onion (1 stalk) diagonally and thinly slice the onion (1/2). Also, slice the king oyster mushroom (1), which you might have in your fridge, into bite-sized pieces.
Step 3
Add the sliced kimchi (1 cup) to a pot and include the oil from the tuna can. Stir-frying the kimchi in tuna oil softens it and deepens its flavor. This is one of Chef Baek’s valuable tips!
Step 4
Once the kimchi starts to soften, add the sliced onion and stir-fry together. When the onion begins to turn translucent, pour in 800ml of rice water. Using rice water makes the broth much deeper and nuttier.
Step 5
Add the prepared tuna, sliced green onions, and king oyster mushrooms. Stir in 1 tablespoon of minced garlic. Bring to a boil over high heat, then carefully skim off any impurities that rise to the surface.
Step 6
Season with 1 tablespoon of soy sauce for soup, 1/3 tablespoon of sugar, and 1/4 tablespoon of sea salt to adjust the taste. After tasting, let it simmer for a little longer to allow the ingredients to meld with the broth.
