Main Ingredients
- 10 white cucumbers
- 1/3 bunch of chives
- 1 cup glutinous rice paste (chapssal-pul)
- 3 Tbsp salt
Seasoning Ingredients
- 5-6 Tbsp red pepper flakes (adjust to taste)
- 4-5 Tbsp anchovy sauce (myeolchi-aekjeot)
- 1.5 Tbsp minced garlic
- 3 Tbsp sugar (adjust sweetness to your preference)
- 1-2 pinches of salt (for adjusting seasoning)
- A little toasted sesame seeds
- 5-6 Tbsp red pepper flakes (adjust to taste)
- 4-5 Tbsp anchovy sauce (myeolchi-aekjeot)
- 1.5 Tbsp minced garlic
- 3 Tbsp sugar (adjust sweetness to your preference)
- 1-2 pinches of salt (for adjusting seasoning)
- A little toasted sesame seeds
Cooking Instructions
Step 1
Wash the white cucumbers thoroughly under running water. Cut them into bite-sized pieces and place them in a large bowl. Sprinkle with 3 Tbsp of salt and mix well. Let them salt for 30-40 minutes, flipping them halfway through to ensure even salting. After salting, rinse the cucumbers 1-2 times in cold water and drain them for at least 30 minutes to maintain their crisp texture.
Step 2
While the cucumbers are salting, combine all the seasoning ingredients (red pepper flakes, anchovy sauce, minced garlic, sugar, and a pinch of salt) in a separate bowl and mix them thoroughly. You can adjust the amount of sugar and salt according to your personal taste. Taste the salted cucumbers and adjust the saltiness of the seasoning mixture accordingly.
Step 3
Wash the chives clean and shake off excess water. Cut them into pieces approximately the same length as the cut cucumbers. The fragrant chives will enhance the overall flavor of the Oi Sobagi.

Add the prepared seasoning mixture to the drained white cucumbers and sprinkle with toasted sesame seeds. Gently toss everything together to ensure the seasoning coats the cucumbers evenly.

After lightly coating the cucumbers with the seasoning, add the chopped chives. Gently mix everything together, being careful not to mash the chives, so their fresh texture is preserved.
