Essential Ingredients
  • 1.5 cups cooked rice, warm
  • 2 sheets of fresh sea tangle (gamtae)
  • 1 pollack roe (myeongnan)
  • 2 Tbsp mayonnaise
  • 0.5 Tbsp sugar

Seasoning for Rice
  • 0.25 Tbsp salt (approx. 1/4 tsp)
  • 1 Tbsp sesame oil
  • A pinch of toasted sesame seeds

Cooking Instructions

Step 1

First, prepare the pollack roe. Gently make an incision along the belly of the pollack roe with the back of a knife, and carefully scrape out the egg sacs (roe) using the dull side of the knife. This step helps to retain the delightful popping texture of the roe.

Step 2

In a bowl, combine the extracted pollack roe, mayonnaise, and sugar. Mix thoroughly until well combined, creating a creamy pollack roe and mayonnaise sauce. You can adjust the sweetness to your preference.

Step 3

To the warm cooked rice, add the seasoning ingredients: sesame oil, salt, and toasted sesame seeds. Gently mix with a spatula or spoon until everything is evenly incorporated and the rice is well-seasoned. Be careful not to mash the rice; aim for a light mix.

Step 4

Take about a tablespoon of the seasoned rice and roll it into a bite-sized ball (approximately 3-4 cm in diameter). Cut each sheet of sea tangle into three equal pieces. Gently wrap each rice ball with a piece of sea tangle, molding it to fit snugly.

Step 5

Finally, top each sea tangle-wrapped rice ball with a dollop of the prepared pollack roe and mayonnaise mixture. Your delicious and visually appealing ‘Sea Tangle & Pollack Roe Rice Balls’ are now complete! Enjoy them immediately or pack them for a delightful lunch.
