Seasoning Ingredients
  • Gochujang (Korean chili paste), 2 Tbsp
  • Gochugaru (Korean chili flakes), 1 Tbsp
  • Sugar, 2 Tbsp
  • Jipganjang (Korean soy sauce for soup), 1 tsp
  • Sesame oil, 1 Tbsp
  • Toasted sesame seeds, a pinch

Cooking Instructions

Step 1

First, bring a generous pot of water to a rolling boil. Once boiling, add the somen noodles. Stir gently to prevent them from sticking together.

When the noodles start to boil up, add 1 cup of cold water to lower the temperature. When it boils up again, add another cup of cold water. Repeating this process twice helps to make the noodles chewier and bouncier. (Pro Tip: Adding cold water in between boils cools down the noodles, washes away excess starch, and helps maintain their elasticity for a perfectly chewy texture.)

Step 3

Rinse the cooked noodles thoroughly under cold running water several times. Rinsing removes any remaining starch, which is crucial to prevent the noodles from becoming mushy. After rinsing, drain them well in a colander until all excess water is removed.
