- 1/2 medium onion
- 5 cloves garlic

Cooking Instructions
Step 1
First, lightly season the 300g of pork stew meat. Sprinkle 1/2 teaspoon of salt and a pinch of black pepper over the meat and mix well. This seasoning helps remove any gamey odor and enhances the flavor.

Next, prepare the vegetables. Thinly slice 5 cloves of garlic. Dice half an onion into approximately 1.5cm cubes. Cut 2 mushrooms (shiitake mushrooms recommended) into roughly 1.5cm cubes as well. Cutting vegetables into uniform sizes ensures they cook evenly.
Step 3
Melt 1 tablespoon of butter in a heated pan over medium-high heat. Once the butter is fully melted, add the seasoned pork and stir-fry quickly until the meat is no longer pink and lightly browned on the outside. Searing the meat first helps to lock in its juices.

Once the pork is mostly cooked, add the prepared garlic, onion, and mushrooms to the pan. Stir-fry everything together, allowing the vegetables to become coated in the cooking fat and mingle with the pork.

Before the pork is completely cooked through, it’s time to add the sauces. Pour in 2 tablespoons of tonkatsu sauce and 1 tablespoon of oyster sauce. Finally, add 1/2 tablespoon of sugar and stir-fry briefly one last time. The sugar complements the sauces, adding a subtle sweetness and balancing the overall flavor profile. Stir quickly to coat everything and give the dish a glossy finish.
