Bracken Preparation

Broth Ingredients

- 500ml water

Cooking Instructions
Step 1
Start with 400g of tender, pre-braised bracken. For a guide on how to properly braise bracken to achieve a wonderfully soft texture, please refer to the link: @7020499.
Step 2
Prepare the anchovy broth. In a pot, combine 500ml of water and 1 dried anchovy and kelp broth pack. Bring to a boil over high heat, then reduce to medium-low and simmer for an additional 8 minutes. Remove and discard the broth pack. Set aside 150ml of the clear anchovy broth for seasoning.
Step 3
Prepare your aromatics. Finely chop the green onion and mince the garlic.

Cut the braised bracken into bite-sized pieces, about 5cm in length. This ensures even cooking and flavor distribution.
Step 5
Now, let’s stir-fry! In a pot or wide pan, add the prepared bracken. Add the seasoning ingredients: 3 Tbsp perilla oil, 1 Tbsp tuna extract, 1 Tbsp soup soy sauce, 1 Tbsp regular soy sauce, 2 Tbsp cooking wine, 2 Tbsp oligosaccharide, and the reserved 150ml of anchovy broth.
Step 6
Stir everything together and cook over medium heat. Allow it to simmer until the liquid is reduced and becomes slightly thick, letting the bracken absorb the delicious flavors.
Step 7
Once the liquid has reduced, add the chopped green onion (2 Tbsp) and the star ingredient for that nutty flavor, perilla seed powder (2 Tbsp). Stir quickly to combine. Turn off the heat immediately after adding the perilla seed powder to preserve its aroma and flavor.

Finish by drizzling in 1 Tbsp of sesame oil for an extra layer of fragrance.

Gently mix everything together with a spatula or spoon until well combined. Your delicious perilla seed bracken stir-fry is now ready!
