Main Ingredients
  • 1 medium zucchini
  • 1 piece green onion (approx. 50g)
  • 1 green chili pepper
  • 1 red chili pepper

Cooking Instructions

Step 1

First, prepare one medium zucchini. It’s best to choose zucchini that are fresh and firm.

Step 2

Wash the zucchini thoroughly. Slice it into half-moon shapes about 0.5 cm thick. If your zucchini has many seeds, you can gently scoop some of them out, but it’s also fine to use it as is. Don’t worry too much, just proceed comfortably.

Step 3

Remove the seeds from the green and red chili peppers and finely chop them. Finely chop the green onion as well. Using a variety of colorful peppers will make your dish look more appealing.

Step 4

Now, let’s start stir-frying. Heat 1 tablespoon of sesame oil in a pan over high heat. Add the sliced zucchini and stir-fry for about 2 minutes. The zucchini should start to become slightly translucent and soften.

Step 5

Once the zucchini is lightly cooked, reduce the heat to low. Add 1/2 tablespoon of salted shrimp and 1 tablespoon of plum extract. Stir well to combine, then cover the pan with a lid and let it cook for a bit.

Step 6

Continue cooking over low heat with the lid on for another 3 to 5 minutes. This will allow the zucchini to become tender and absorb the flavors.

Step 7

During this process, the zucchini will release some moisture, creating a light sauce. It’s best to cook the zucchini until it’s tender but still has a slight crispness, not overly mushy.

Step 8

Add the prepared green onion, green chili pepper, red chili pepper, and minced garlic to the pan. Stir-fry briefly until everything is combined. Taste the dish and adjust the seasoning if needed by adding a little more salted shrimp, salt, or oligosaccharide. Finally, turn off the heat, cover the pan again, and let the residual heat finish cooking the ingredients.

Step 9

Drizzle in the remaining 1 tablespoon of sesame oil and sprinkle with sesame seeds to finish. Your delicious zucchini and salted shrimp stir-fry is ready! It’s incredibly simple but guaranteed to be delicious – a perfect side dish. Enjoy your meal!
