Noodle Ingredients
- Somen noodles, 1 serving (approx. 100g)
- Kimchi, 1 handful (approx. 100g)
- Minced garlic, 1 tsp
- Anchovy extract (fish sauce) 1/2 cup (approx. 100ml)
- Soy sauce for soup, 1/2 cup (approx. 100ml)
- Black pepper, a pinch
- Eggs, 2
- Sugar, 1 tsp
- Gochugaru (Korean chili flakes), 1 tsp
- Toasted sesame seeds, 1 tsp
- Seaweed flakes, a little

Step 1

First, prepare the delicious broth. In 600ml of water, combine 1/2 cup of anchovy extract, 1/2 cup of soy sauce for soup, 1 tsp of minced garlic, and a pinch of black pepper. Stir well. If you don’t have pre-made broth, using anchovy extract will create a flavorful base for your soup. This broth will serve as the foundation for your cold noodles or Janchi Guksu.
Step 3
Next, prepare the egg garnish. Whisk the eggs until smooth, then cook thinly like a crepe over low heat. Let it cool slightly, then julienne it into fine strips. This adds a visually appealing touch to the dish.
Step 4
Finely chop the kimchi. Make sure to squeeze out excess liquid from the chopped kimchi; this prevents the broth from becoming too sour and maintains a balanced flavor. In the squeezed kimchi, add 1 tsp of sugar, 1 tsp of gochugaru, 1 tsp of toasted sesame seeds, and a little sesame oil (optional). Gently mix everything together by hand. This seasoned kimchi will be placed on top of the noodles, adding a sweet and tangy flavor.
