Refreshing & Crisp Stonecrop Salad with Zesty Oriental Dressing

Hello everyone! Food power is national strength. Today, I’ll share a golden recipe for stonecrop salad and oriental dressing that’s perfect even when you have a lack of appetite. Packed with the vibrant essence of spring, let’s enjoy a healthy and delicious meal!
Salad Ingredients
- 2 handfuls of fresh stonecrop (approx. 100-150g)
- 1/2 dragon fruit
- 2 Tbsp canned corn (drained)
- 1 mini cucumber
- 1/4 red cabbage (approx. 50g)
Golden Ratio Oriental Dressing
- 2 Tbsp soy sauce (approx. 30ml)
- 2 Tbsp vinegar or lemon vinegar (approx. 30ml)
- 2 Tbsp white sugar (approx. 30g)
- 2 Tbsp sesame oil (approx. 30ml)
- A pinch of sesame seeds (for garnish)
- 2 Tbsp soy sauce (approx. 30ml)
- 2 Tbsp vinegar or lemon vinegar (approx. 30ml)
- 2 Tbsp white sugar (approx. 30g)
- 2 Tbsp sesame oil (approx. 30ml)
- A pinch of sesame seeds (for garnish)
Cooking Instructions
Step 1
Prepare the fresh stonecrop. If you’ve harvested it yourself, even better! Stonecrop doesn’t wilt easily, making it excellent for salads. Ensure any soil or debris is thoroughly removed.
Step 2
Soak the stonecrop in cold water mixed with 2 tablespoons of vinegar for 10 minutes to sanitize and sterilize. Afterwards, rinse it thoroughly under running water two to three times. Gently press with your hands to remove as much water as possible, as excess moisture can make the dressing watery.
Step 3
Wash the mini cucumber clean and slice it thinly into rounds, about 0.5 cm thick. This will add a satisfying crunch.
Step 4
Drain the canned corn thoroughly using a sieve. Its pop and sweetness will add a delightful element to the salad.
Step 5
Dragon fruit adds sweetness and a soft texture to the salad. While any fruit works well, we’re using dragon fruit today. It was a thoughtful gift from a neighbor.
Step 6
Cut the dragon fruit in half lengthwise. Then, peel the skin and cut it into bite-sized cubes, approximately 1.5 cm. Slice the fruit carefully to make it look appealing.
Step 7
Shred the red cabbage thinly. Soaking the shredded red cabbage in cold water briefly will help release some of its purple color, making it look brighter and enhancing its crispness. Ensure it’s drained before use.
Step 8
Now it’s time to arrange everything beautifully. Place a generous amount of stonecrop in the center of a large plate. Top it with the shredded red cabbage and sprinkle the corn kernels here and there. Arrange the cubed dragon fruit in a circle around the stonecrop, and then place the sliced mini cucumbers around the outer edge to create an attractive garnish.
Step 9
Finally, let’s make the golden ratio oriental dressing. In a bowl, combine 2 tablespoons each of soy sauce, vinegar, white sugar, and sesame oil. Using white sugar is key to achieving a clean and delicious dressing; avoid brown or dark brown sugar, as they can make the dressing sticky. Whisk vigorously with a whisk or spoon until the sugar is completely dissolved. Finish by adding a pinch of sesame seeds. Making your own dressing instead of buying it is not only more economical but also ensures a fresher, more vibrant flavor!
