Main Ingredients
  • 1/2 small radish
  • 1 Ottugi Dried Pollack Soup Block
  • 2 Tbsp sesame oil
  • 1 Tbsp salted shrimp
  • 1L natural seasoning broth

Cooking Instructions

Step 1

First, prepare half of a small radish. Peel it and wash it thoroughly. Then, slice the radish into thin, uniform pieces, about 0.3cm thick. Cutting them into about 6 bite-sized pieces will make them easy to eat once cooked.

Step 2

Place the natural seasonings into a stock bag and bring to a boil with 1L of water to create a refreshing broth. Once the broth is ready, remove the stock bag. Store the remaining broth in an airtight container in the refrigerator or freezer. This broth can be repurposed for making ramen later, which will make the noodles chewier and the soup richer. Don’t miss this broth recycling tip!

Step 3

In a wide pot, add the sliced radish and drizzle with 2 tablespoons of sesame oil. Sauté over medium-low heat until the radish becomes translucent and slightly tender. This sautéing process helps to draw out the natural sweetness of the radish and adds a subtle flavor to the soup.

Step 4

While a plain radish soup is typically light, it’s time to elevate its flavor with the ‘Ottugi Dried Pollack Soup Block.’ Using just one of these blocks will significantly deepen and refresh the soup’s taste, creating a rich flavor as if it were simmered for a long time. This block allows you to make a delicious soup even without using commercial broth or anchovy broth.

Step 5

Pour the 1L of natural seasoning broth you prepared earlier into the pot with the sautéed radish. Bring the soup to a rolling boil over high heat.

Step 6

Once the broth begins to boil, add 1 Ottugi Dried Pollack Soup Block and stir until it dissolves completely. Since the dried pollack soup block is already seasoned, it’s best to adjust the final seasoning at the very end. Start with a lighter taste and add more seasoning to your preference.

Step 7

When the soup is boiling vigorously again, add 1 tablespoon of salted shrimp to season. For clear soups based on fish, like radish soup, dried yellow pollack soup, or dried pollack soup, salted shrimp is the perfect seasoning. The umami and refreshing taste of salted shrimp further enhance the soup’s flavor. Taste and add more salted shrimp if needed.

Step 8

Serve the finished radish soup attractively in bowls. This super simple radish soup, thanks to the harmonious combination of radish, dried pollack soup block, and salted shrimp, offers a clear yet profoundly savory and refreshing taste that doubles the delight. Isn’t it amazing how you can achieve such a wonderful broth flavor without meat? This addictive radish soup, which will have you finishing a bowl of rice in no time, is a must-try!
