  • Well-fermented Kimchi 1/4 head (approx. 300g)

Beef Marinating Ingredients
  • Sugar (Wondang) 1 Tbsp
  • Cooking Wine (Mihyang) 2 Tbsp
  • Soy Sauce (Yangjo) 2 Tbsp
  • Ground black pepper, a pinch
  • Ginger powder, a pinch

Kimchi Seasoning
  • Sugar (Wondang) 1 Tbsp
  • Soy Sauce (Yangjo) 1 Tbsp
  • Gochujang (Korean chili paste) 2 Tbsp
  • Sesame oil 2 Tbsp

Cooking Instructions

Step 1

First, prepare 200g of beef. Using pre-cut stewing beef is convenient. Place the beef in a bowl, add 2 Tbsp of cooking wine, 2 Tbsp of soy sauce, 1 Tbsp of sugar, a pinch of black pepper, and a pinch of ginger powder. Mix well by hand to marinate. This step removes any gamey odor from the beef and makes it more tender. Marinate for at least 10 minutes.

Step 2

Prepare about 1/4 head of kimchi. Cutting it into bite-sized pieces makes it easier to eat and helps the seasoning penetrate better. If the stems are tough, chop them smaller.

Step 3

Peel and thoroughly wash 2 potatoes. Cut them into flat, round slices about 0.5cm thick. Avoid slicing them too thinly, as they can break apart during cooking.

Step 4

Get a deep pot or wok. Add the chopped kimchi and all the kimchi seasoning ingredients (1 Tbsp sugar, 1 Tbsp soy sauce, 2 Tbsp gochujang, 2 Tbsp sesame oil). Stir-fry over medium-high heat until the kimchi becomes softened. This sautéing step reduces the sourness of the kimchi and enhances its savory flavor.

Step 5

Once the kimchi is somewhat sautéed, add the sliced potatoes and stir-fry together briefly. Then, pour in 600ml of water (about 3 cups). Bring to a boil over high heat, then reduce to medium heat and simmer until the potatoes are half-cooked.

Step 6

When the stew starts boiling, add the marinated beef. If using thinly sliced beef (like for shabu-shabu), it cooks quickly, so spread it out in the pot to prevent clumping. Once the beef is cooked, add the roughly chopped green onion and simmer for a little longer. The green onion adds a refreshing flavor to the broth. Taste and adjust seasoning with salt or soy sauce if needed.
