Main Ingredients
- 5 Eggs
- 1 handful Cooked Glass Noodles (approx. 100g)
- 1 handful Chives (approx. 30g)
- 1/4 Carrot (approx. 30g)
- 2 Korean Green Peppers (or spicy peppers like Cheongyang peppers)
Seasoning & Others
- 1/2 Tbsp Fine Salt
- 1/2 Tbsp Sugar
- 1/2 Tbsp Sesame Oil
- 2 Tbsp Starch (or Potato Starch)
- Pinch of Black Pepper
- 1/2 Tbsp Fine Salt
- 1/2 Tbsp Sugar
- 1/2 Tbsp Sesame Oil
- 2 Tbsp Starch (or Potato Starch)
- Pinch of Black Pepper
Cooking Instructions
Step 1
First, prepare the glass noodles. Boil them until cooked, then rinse thoroughly under cold running water to remove any excess starch. Drain them well in a colander. Ensuring the noodles are well-drained is crucial to prevent them from clumping.
Step 2
Place the drained glass noodles into a large bowl. Use kitchen scissors or a knife to cut them into bite-sized pieces, about 2-3 cm long. Add 1/2 Tbsp fine salt, 1/2 Tbsp sugar, and 1/2 Tbsp sesame oil. Mix everything evenly to allow the seasoning to be absorbed.
Step 3
Wash and thoroughly dry the chives and Korean green peppers (or spicy peppers, according to your preference). Finely mince them. Finely chopped vegetables will mix better with the egg batter and provide a pleasant texture when cooked.
Step 4
Peel the carrot and dice it very finely. The finely chopped carrot adds a nice color and a subtle crunch to the dumplings.
Step 5
Add the minced chives, minced peppers, and minced carrot to the bowl containing the seasoned glass noodles. Crack in all 5 eggs and mix everything together until well combined.
Step 6
Now, add 2 Tbsp of starch (or potato starch). The starch will help the egg dumplings hold their shape and prevent them from falling apart during cooking.
Step 7
Finally, add a pinch of fine salt and pepper to taste. Use a spoon or spatula to mix the ingredients thoroughly, almost like kneading the batter. The batter should be slightly thick, not too runny.
Step 8
Prepare a 4-cup non-stick pan or a regular frying pan. Lightly grease each cup or the entire pan with cooking oil. Heat the pan over medium-low heat. Ladle about one scoop of the batter into each section or onto the pan, shaping them into oval or half-moon forms.
Step 9
Once the bottom of the egg batter starts to turn golden brown, carefully fold each dumpling in half using chopsticks or a spatula. Gently press down to secure the shape. Flip and cook on both sides until golden brown and slightly crisp. Ensure they are cooked through completely.
Step 10
These glass noodle egg dumplings are delicious on their own, but you can enhance the flavor by serving them with a dipping sauce. A simple mix of soy sauce with a splash of vinegar and a pinch of chili powder makes a great accompaniment. They offer a dumpling-like experience that is light, healthy, and satisfying. Enjoy this wonderful dish that balances both health and flavor!
