  • Fresh salmon fillet (sushi-grade), 100-150g
  • Wasabi paste, to taste
  • Capers, a few (optional)

Sushi Vinegar (Sushi-zu)
  • 2 Tbsp rice vinegar
  • 1 Tbsp sugar
  • 1/2 tsp salt

Sauce
  • Horseradish sauce (to taste)

Cooking Instructions

Step 1

Begin by preparing the salmon. Rinse the salmon fillet under cold running water, then gently pat it dry with paper towels. Ensuring the surface is completely dry is key to achieving the best flavor and texture for your sushi. Slice the salmon into bite-sized pieces, suitable for topping the sushi rice.

Step 2

Next, prepare the sushi vinegar (sushi-zu), which is essential for flavoring the rice. In a small bowl, combine 2 tablespoons of rice vinegar, 1 tablespoon of sugar, and 1/2 teaspoon of salt. Stir well until the sugar and salt are completely dissolved. For easier dissolution, you can warm the mixture slightly in the microwave for about 10-15 seconds.

Step 3

Gently pour the prepared sushi vinegar over the warm cooked rice. Using a rice paddle or spatula, carefully mix the vinegar into the rice, ensuring not to mash the grains. Add the vinegar gradually and mix until the rice is evenly seasoned and has a glossy sheen. The goal is to coat each grain without making the rice too mushy.

Step 4

Now, shape the sushi rice. Moisten your hands lightly with water to prevent the rice from sticking. Take a portion of the seasoned rice (about a tablespoon or two) and gently form it into an oval or rectangular shape, suitable for nigiri. Avoid pressing too hard, as this can result in dense, hard rice.

Step 5

Finally, assemble the sushi. Place a small amount of wasabi paste onto each shaped rice ball. Then, carefully place a slice of prepared salmon on top of the wasabi. If desired, add a few capers for a burst of briny flavor. (Optional) Serve immediately. While delicious on its own, dipping the sushi lightly in horseradish sauce can add an extra layer of creamy spice. Enjoy your homemade salmon sushi!
