Fragrant Plum Marinade with Fresh Plum Guacamole
Summer Plum Delight: Sweet Plum Marinade and My Style Plum Guacamole
This recipe uses delightful Hoomusa plums, a summer seasonal fruit, to create two refreshing dishes. The ‘Plum Marinade’ is a light appetizer showcasing the plum’s tartness complemented by aromatic basil. The ‘Plum Guacamole’ (named ‘Molly’ after guacamole) is my own unique take, inspired by the classic Mexican dip, offering a fresh blend of vegetables and plums. This is a ‘home-style’ recipe, designed to be easy and fun for everyone to make.
Refreshing Plum Marinade
- 3 fresh plums
- 5 fresh basil leaves
- 2 cloves garlic, thinly sliced
Fresh Plum Guacamole
- 3 fresh plums
- 1/4 onion, finely diced
- 1 mini bell pepper, finely diced
Plum Marinade Dressing
- 1 Tbsp sugar
- 1 Tbsp lemon juice
- 1 tsp Dijon mustard
- Pinch of salt
- Pinch of pepper
Plum Guacamole Dressing
- 1 Tbsp sugar
- 1 Tbsp lemon juice
- 1 tsp salt
- 1 tsp soy sauce
- Pinch of pepper
- Pinch of dried parsley
- 3 fresh plums
- 1/4 onion, finely diced
- 1 mini bell pepper, finely diced

Cooking Instructions
Step 1
Let’s start with the ‘Refreshing Plum Marinade’. First, wash all ingredients thoroughly and prepare them.
Step 2
While you can enjoy plums with their skin on, for a softer texture today, we’ll peel them. Cut the plums into bite-sized pieces, and remember to remove the pits! We’ll only be using the flesh.
Step 3
In a large bowl, combine the prepared plums, finely chopped fresh basil leaves, and all the ingredients for the ‘Plum Marinade Dressing’. Gently toss to combine. Reserve one basil leaf for garnish if you like. If you prefer a stronger basil flavor, chop and add all of it.
Step 4
Transfer the finished plum marinade to a pretty serving dish. Garnish with the thinly sliced garlic, reserved plum skin (optional), and basil leaf for an appealing presentation.

Now, let’s make the ‘Fresh Plum Guacamole’. As before, wash all the ingredients for this dish clean and prepare them.

Finely dice the onion and mini bell pepper. You can customize this with other vegetables like broccoli or bell peppers if you have them on hand, or simply use onion if that’s all you have. Feel free to be creative!
Step 7
Similar to the marinade, remove the pits from the plums and peel them. For this guacamole recipe, we’ll mash the plums well to achieve a smooth, jam-like consistency.
Step 8
In a bowl, combine the mashed plums, diced onion and bell pepper, and all the ingredients for the ‘Plum Guacamole Dressing’. Mix everything together thoroughly. Instead of just salt, adding a touch of soy sauce enhances the flavor with more depth. Adjust the amount of salt, sugar, and lemon juice to your personal preference. (Optional tip: For a thinner, salsa-like consistency, you can add a tiny amount of protein powder, but this is not essential. Without it, it will simply be a looser plum salsa.)
Step 9
Cut the tortillas into quarters. Heat a dry skillet over medium-low heat and toast the tortilla pieces until golden brown and slightly crisp on both sides. Toasting them dry makes them wonderfully light.
Step 10
Slightly fold the toasted tortilla pieces and top each one with a spoonful of the prepared plum guacamole. Finish with a sprinkle of dried parsley or any other desired garnish for a lovely presentation.
