How to Make Crispy Rice Crackers (Nurungji) with an Air Fryer – Using Brown Rice

Ingredients
  • 1 bowl of multi-grain rice (Using cold, refrigerated rice works better than freshly cooked hot rice for making nurungji.)

Cooking Instructions

Step 1

Line the bottom of your air fryer basket with parchment paper. Spread 1 bowl of multi-grain rice thinly and evenly over the parchment paper. Ensure there are no gaps between the grains of rice; spreading it as thinly as possible is the key to achieving crispy nurungji. Using cold rice, which has less moisture, will result in an even crispier texture.

Step 2

Place the thinly spread rice into the air fryer and bake at 180°C (356°F) for about 10 minutes. This initial step helps to dry out the surface moisture of the rice and begins the cooking process.

Step 3

After 10 minutes, carefully remove the rice from the air fryer and flip it over. Return it to the air fryer and bake for another 5 minutes at 180°C (356°F). The desired level of crispiness can vary based on personal preference. Continue baking in 5-minute increments, checking the nurungji’s texture and color (aiming for a golden brown hue like in the picture), until it reaches your preferred crispness. Be cautious not to overbake, as it can burn.
