Gim rolls are delicious but can be quite a hassle to make. This recipe offers a simpler alternative by using rice paper instead of gim! These rolls are healthier as they are not fried, and they are packed with chewy glass noodles and fresh vegetables, making them a delightful combination of taste and nutrition. They are perfect as a snack for kids, a side dish for meals, or even a savory accompaniment to makgeolli (Korean rice wine).

- 100g Glass Noodles
- 10-15 sheets Rice Paper
- 1/4 Carrot
- 1/4 Green Onion
- 1 Cheongyang chili pepper (optional)
- A little Cooking oil
Cooking Instructions
Step 1
First, cook the glass noodles. Once cooked, cut them into approximately 2-3 cm lengths with scissors. Cutting them too short might cause the rolls to unravel during assembly, so aim for a manageable size. Place the cooked glass noodles in a bowl and season them by gently mixing with 2 Tbsp soy sauce, 1/2 Tbsp sugar, 1 Tbsp sesame oil, and a pinch of black pepper. (Boiling the glass noodles in soy sauce water can add a deeper color and richer flavor.)

Wash and finely mince the carrot and green onion. If you enjoy a bit of spice, finely chop the Cheongyang chili pepper as well. Add the minced vegetables to the seasoned glass noodles and mix thoroughly.
