- 1/2 medium head of cabbage
- 1/2 onion
- 1/4 carrot
- 2 chili peppers (e.g., Korean green chilies or red chilies)
Seasoning Ingredients
- 1/2 cup coarse sea salt (for salting)
- 3 Tbsp fish sauce (anchovy or sand lance)
- 1 Tbsp plum extract (maesil cheong)
- 4 Tbsp Korean chili flakes (gochugaru)
- 1 Tbsp minced garlic
- 1 Tbsp toasted sesame seeds
- 1/2 cup coarse sea salt (for salting)
- 3 Tbsp fish sauce (anchovy or sand lance)
- 1 Tbsp plum extract (maesil cheong)
- 4 Tbsp Korean chili flakes (gochugaru)
- 1 Tbsp minced garlic
- 1 Tbsp toasted sesame seeds
Cooking Instructions
Step 1
First, wash the cabbage thoroughly, remove the core, and slice it thickly into strips about 0.5 cm wide. Sprinkle 1/2 cup of coarse sea salt over the sliced cabbage and toss to coat evenly. Let it sit for 10 minutes to salt.

After 10 minutes, flip the cabbage over from bottom to top. This ensures the cabbage is salted evenly.

Continue to salt for another 10 minutes, or until the cabbage pieces become slightly flexible and bend easily. Be careful not to over-salt, as it can become too soft.
