  • 1 Korean radish, about 6cm (approx. 200-250g)

Seasoning Ingredients
  • 2 Tbsp sugar
  • 1.5 Tbsp vinegar
  • 1/2 Tbsp salt (sea salt or coarse salt recommended)

Cooking Instructions

Step 1

First, wash the Korean radish thoroughly and peel off the skin thinly. Then, using a knife, julienne it into very thin strips, about 0.3cm thick. If julienning is challenging, you can use a mandoline slicer. The thickness of the radish strips affects the texture, so try to cut them uniformly.

Step 2

Transfer all the julienned radish into a large mixing bowl. Having the bowl ready before you start cutting will make the subsequent steps smoother.

Step 3

Add 2 tablespoons of sugar, 1.5 tablespoons of vinegar, and 1/2 tablespoon of salt to the julienned radish. While the amounts can be adjusted to your preference, it’s recommended to follow the recipe initially and then taste and adjust as needed. The type of salt used can also influence the flavor, with sea salt or coarse salt often preferred for their cleaner taste.

Step 4

Gently mix the ingredients with your hands, ensuring the seasoning is evenly distributed throughout the radish. Be careful not to mix too vigorously, as this can release excess moisture from the radish, making it less crisp. Allow the radish to sit for a few minutes for the sugar and salt to dissolve and for the flavors to meld. Taste the salad and adjust the seasoning: add a pinch more salt if it’s too bland, a bit more sugar for sweetness, or a splash more vinegar for extra tanginess, according to your preference.

Step 5

Serve the seasoned radish salad generously in a serving dish. While it’s delicious immediately, chilling it in the refrigerator for about 20-30 minutes will enhance its crispness and refreshing flavor, making it even more enjoyable, especially during warmer months.
