Main Ingredients
- 1 pack flat fish cakes
- 1 pack assorted fish cakes (various shapes)
- 1 piece daikon radish (about 10cm long)
- 1 anchovy-kelp broth pack
- 6 whole garlic cloves
- 1/2 onion
- 1.2 liters water
- 1 stalk green onion
Seasoning & Extras
- 1.5 Tbsp soup soy sauce (or fish sauce)
- 1 pinch salt (for adjusting taste)
- A little black pepper
- 1.5 Tbsp soup soy sauce (or fish sauce)
- 1 pinch salt (for adjusting taste)
- A little black pepper
Cooking Instructions
Step 1
In a pot, add 1.2 liters of water, the anchovy-kelp broth pack, 6 whole garlic cloves, 1/2 onion, 1 piece of daikon radish, and 1 stalk of green onion. Bring to a boil over high heat, then reduce to medium-low heat and simmer for 12 minutes to create a clear and deep broth.
Step 2
While the broth is simmering, prepare to skewer the fish cakes. If you’re using skewers, briefly blanch the fish cakes in boiling water to remove excess oil, which results in a cleaner taste. (Optional: If you have specific fish cakes for skewers, blanch them in boiling water now.)
Step 3
Cut the fish cakes into bite-sized pieces. You can cut them lengthwise or into 2-3 segments, depending on preference. Using a variety of fish cake shapes will make your soup more visually appealing.
Step 4
Once the broth is ready, remove and discard the solids (broth pack, garlic, onion, radish, green onion), leaving only the clear broth. Now, season the broth with 1.5 tablespoons of soup soy sauce, a pinch of salt, and a little black pepper for enhanced flavor. Using fish sauce instead of soup soy sauce can add an even deeper umami taste.
Step 5
Arrange the prepared fish cakes neatly onto skewers and place them in the pot.
Step 6
Pour the freshly made clear broth over the skewered fish cakes until they are submerged. Continue to simmer over medium heat for about 5 minutes, allowing the flavors to meld. Your delicious and impressive fish cake soup, rivaling that of any izakaya, is now complete! Enjoy this comforting soup.
