Main Ingredients
  • 1 packet Enoki Mushrooms (approx. 100g)
  • 5 fresh Perilla Leaves
  • 3 large Eggs, room temperature
  • Canola oil or cooking oil, as needed

Seasoning and Aromatics
  • 1/2 Tbsp Minced Garlic
  • 1/2 tsp Salt
  • Pinch of Black Pepper (to taste)

Cooking Instructions

Step 1

First, remove the packaging from the enoki mushrooms. Trim off about 1cm from the base of the mushroom bundle and prepare them cleanly.

Step 2

Cut the prepared enoki mushrooms in half. Then, finely chop the bottom, clustered part of the mushrooms with a knife. This will help them mix well with the perilla leaves.

Step 3

Trim off the stems from the perilla leaves. Wash them gently under running water and pat them dry.

Step 4

Once the perilla leaves are dry, roll them up tightly and thinly slice them into shreds. Gently separate the shredded leaves with your hands to prevent clumping.

Step 5

In a large bowl, crack the 3 eggs. Beat them thoroughly, ensuring the egg whites and yolks are well combined, and any stringy bits are removed.

Step 6

To the beaten eggs, add the chopped enoki mushrooms, shredded perilla leaves, 1/2 Tbsp minced garlic, 1/2 tsp salt, and a pinch of black pepper. Gently mix everything together with a spatula or chopsticks until well combined and no clumps remain.

Step 7

Your delicious batter, with all ingredients evenly mixed, is now ready. We’ll proceed to cook the pancakes.

Heat a non-stick pan over medium heat and add a generous amount of canola oil. The pan is ready when the oil is shimmering.

Using a ladle or a spoon, scoop about one spoonful of the batter and place it onto the hot pan. It’s best to make the pancakes slightly thick for a satisfying chew.

Step 10
