Abalone Rice Cooked in a Pot with Abalone Liver

Abalone Pot Rice (Nutritious Rice Cooked in a Pot, Even with Abalone Liver – It’s Not Difficult!)

When large, fresh abalones are on sale at the market, I buy a good amount, prepare them, and portion them for freezing. This way, I can easily and quickly cook delicious dishes whenever I crave them.

Rice Cooking Ingredients
  • 5 Abalones (cleaned)
  • 400ml Rice (approx. 2 cups)
  • 400ml Water (or broth)
  • 1 Tbsp Minced Garlic
  • 2 Tbsp Sesame Oil
  • 8 Scallions (for topping)

Garnish and Stir-fry Ingredients
  • 2 Shiitake Mushrooms
  • 1 handful Oyster Mushrooms (approx. 50g)
  • 1 Tbsp Cooking Oil
  • 1 Tbsp Soy Sauce
  • Pinch of Black Pepper
  • 1 Tbsp Sesame Oil
  • Pinch of Toasted Sesame Seeds

Seasoning Sauce Ingredients
  • 10 Scallions (chopped)
  • 30ml Soy Sauce (approx. 2 Tbsp)
  • 1 Tbsp Minced Garlic
  • 1 Tbsp Sesame Oil
  • 0.5 Tbsp Toasted Sesame Seeds (approx. 1 tsp)

Cooking Instructions

Step 1

First, rinse the 400ml of rice gently under running water and soak it for about 30 minutes. Soaking the rice beforehand will result in a moister and softer cooked rice.

Step 2

Thoroughly scrub the abalones, paying attention to the edges of the shells and the surface. Separate the abalone meat from the shell. Carefully remove the abalone liver, rinse it under running water to clean out any grit, and finely mince it. Set aside. Slice the abalone meat into bite-sized pieces.

Step 3

Finely chop the 10 scallions designated for the seasoning sauce. In a small bowl, combine the chopped scallions with 30ml soy sauce, 1 Tbsp minced garlic, 1 Tbsp sesame oil, and 0.5 Tbsp toasted sesame seeds. Mix well to create a delicious seasoning sauce.

Step 4

For the garnish, remove the stems from the shiitake mushrooms and slice them thinly. Separate the oyster mushrooms into individual strands by removing the tough base.

Step 5

Heat 1 Tbsp cooking oil in a pan over medium heat. Add the sliced shiitake and oyster mushrooms and stir-fry until fragrant. Once the mushrooms are slightly cooked, add 1 Tbsp soy sauce and continue to stir-fry, enhancing their umami flavor. Transfer the stir-fried mushrooms to a separate plate.

Step 6

Now, prepare the pot for cooking the rice. Drizzle 2 Tbsp sesame oil into the bottom of the pot. Add 1 Tbsp minced garlic and sauté over low heat until fragrant. The subtle aroma of garlic will prevent the rice from sticking and add depth of flavor.

Step 7

Add the finely minced abalone liver to the fragrant garlic and stir-fry together over medium-low heat for 1-2 minutes. The rich, savory flavor of the abalone liver will infuse into the oil, greatly enhancing the pot rice’s taste.

Step 8

Drain the soaked rice and add it all to the pot. Stir gently with a spatula to coat the rice grains evenly with the abalone liver and garlic oil. Sauté until the rice grains become translucent; this ensures the rice will be fluffy and not clumped together.

Step 9

Once the rice is sautéed, carefully pour in 400ml of water. The rice-to-water ratio is typically 1:1. (You can also use broth for extra flavor if desired.)

Step 10

Cover the pot with a lid and bring it to a boil over high heat. As soon as it starts boiling, reduce the heat to medium and cook for about 10 minutes, or until the water level has reduced. Be mindful of the heat to prevent the bottom from scorching.

Step 11

After 10 minutes, lift the lid to check the rice’s doneness. Gently mix the rice with a spatula to prevent clumping. Then, reduce the heat to very low and cook for another 5 minutes to ensure the rice grains are fully cooked through.

Step 12

While the rice is finishing, score the prepared abalone meat in a crosshatch pattern. Scoring makes the abalone more tender and helps it absorb flavors better. Slice into desired thicknesses.

Step 13

Turn off the heat after the 5 minutes on low heat. Evenly arrange the stir-fried mushrooms and sliced abalone over the rice. Replace the lid and let it steam for 10 minutes. During this resting period, the delicious juices from the abalone and mushrooms will seep into the rice, creating a richer flavor.

Step 14

Just before serving, sprinkle the prepared seasoning sauce and the finely chopped scallions over the freshly cooked abalone pot rice. Mix well and enjoy this exquisite pot rice, featuring the chewy abalone, fragrant mushrooms, and savory abalone liver!
