I made an in-flight meal bento box. It’s great for travel because I made a bento box that doesn’t leak broth and doesn’t have a strong smell. Enjoy your trip with this convenient and delicious bento!
Flavorful Rice Ball Ingredients
- 420g Cooked Rice (approx. 2 servings)
- 200g Spam (1 can)
- 60g Diced Carrots
- 120g Diced Zucchini
- 60g Diced Pickled Radish (Danmuji)
- 5 Tbsp Gim-joabon (Seaweed Flakes)
- 1 Tbsp Sugar
Creamy Potato Salad Ingredients
- 300g Mashed Potatoes (approx. 2-3 medium potatoes)
- 4 Hard-boiled Eggs
- 1 Cucumber
- 40g Finely Diced Carrots
- 4 Tbsp Mayonnaise
- 2 Tbsp Honey Mustard
- 2 Tbsp Grated Parmesan Cheese
- 1 Tbsp Sugar
- Pinch of Black Pepper
- 0.5 Tbsp Salt (for salting cucumber and seasoning)

- 2 Slices Cheddar Cheese
- Hallabong Jam (or your preferred jam) to taste

- 0.5 Tbsp Salt (for salting cucumber and seasoning)

Cooking Instructions
Step 1
Finely dice the Spam, carrots, zucchini, and pickled radish for the rice balls. Dice the Spam into small cubes and finely chop the vegetables for a pleasant texture.
Step 2
In a medium-heat frying pan, add the diced Spam and 1 tablespoon of sugar. Sauté until golden brown and slightly crispy, allowing the Spam’s natural oils to render and create a delicious flavor.
Step 3
Once the Spam is nicely browned, add the diced carrots and stir-fry for about 2 minutes. This helps to bring out the sweetness of the carrots.

Next, add the diced zucchini and sauté briefly until it’s slightly softened but not mushy. Be careful not to overcook it, as it can become watery.

In a bowl, combine the sautéed ingredients, 2 bowls of warm rice, and the seaweed flakes. Wearing disposable gloves, mix everything thoroughly. Form the mixture into bite-sized, round rice balls.
Step 6
Place each rice ball on a piece of plastic wrap and tightly wrap it. This helps keep the rice balls intact and makes them easy to handle later.
Step 7
For the potato salad, place the washed potatoes in a microwave-safe container or a zip-top bag. Seal the bag and poke a few holes in the top with a fork. Microwave on high for 8 minutes. Check for doneness by piercing with a chopstick; it should go in easily. If not cooked through, microwave in additional 1-2 minute intervals. Peel the potatoes while they are still hot and mash them thoroughly until smooth.
Step 8
Wash the cucumber, remove the seedy core, and finely chop it. Place the chopped cucumber in a bowl, add 0.5 tablespoon of salt, and let it sit for about 10 minutes to draw out excess moisture. Rinse the cucumber lightly under cold water and squeeze out any remaining water firmly with your hands. This step is crucial to prevent a watery potato salad.
Step 9
Chop the hard-boiled eggs into small pieces. These will add a creamy texture to the potato salad.
Step 10
In a large bowl, combine the mashed potatoes, chopped hard-boiled eggs, and the squeezed cucumber. Add 4 tablespoons of mayonnaise, 2 tablespoons of honey mustard, 2 tablespoons of grated Parmesan cheese, 1 tablespoon of sugar, and a pinch of black pepper. Mix everything well until evenly combined to create a delicious potato salad.
Step 11
Now, let’s assemble the sandwiches. Spread a thin layer of Hallabong jam (or your favorite jam) on one slice of whole wheat bread. Place a slice of cheddar cheese on top of the jam. Generously pile the prepared potato salad onto the cheese. Top with the second slice of bread to complete the sandwich. You can also use mayonnaise instead of jam if preferred.

Cut each sandwich in half diagonally to reveal the layers. This makes them easier to eat and more visually appealing.
