Main Ingredients
- 1 block of firm tofu (approx. 300g)
- About 10 roots of fresh Angelica tree root (or one handful)
- 5 Tbsp all-purpose flour (or pancake mix)
- 1 tsp salt (adjust to taste)
Cooking Instructions
Step 1
1. Prepare the Angelica tree root: Fresh Angelica tree root often has soil attached. Wash it thoroughly under running water, paying attention to the stems and leaves. Trim off any wilted or dirty outer leaves.

2. Trim thick roots: If the Angelica tree root has very thick roots, you can lightly trim or remove the tough core part with a knife for a more tender texture.

3. Rinse the Angelica tree root: Rinse the prepared Angelica tree root 2-3 times in cold water to remove any remaining soil or debris. Gently squeeze out excess water.

4. Mash the tofu: Wrap the tofu in a clean cloth or paper towels to remove excess moisture. Place it in a bowl and mash it smoothly with a fork or your hands until it’s well broken down. Avoid leaving large lumps.

5. Chop the Angelica tree root: Finely chop the washed and drained Angelica tree root into small pieces (about 0.5 cm or less). If the pieces are too long, they can be difficult to handle when frying the pancake.

6. Make the batter: In the bowl with the mashed tofu, add the chopped Angelica tree root, flour, and salt. Mix everything together evenly until a cohesive batter forms. If the batter is too wet, add a little more flour. If it’s too stiff, add a tiny bit of water to reach the desired consistency. (If using pancake mix, adjust the salt as it’s already seasoned.)

7. Pan-fry until golden brown: Heat a generous amount of cooking oil in a frying pan over medium-low heat. Ladle portions of the batter into the pan and spread them thinly into desired shapes. Fry on both sides until golden brown and crispy. Ensure the pancake is cooked through, with the tofu and Angelica tree root cooked completely.
