Salad Ingredients
  • 2-3 medium potatoes
  • A small piece of king oyster mushroom
  • 1/4 apple
  • 3-4 cherry tomatoes

Natural Mayonnaise Ingredients
  • 100g raw cashews and peanuts
  • 25g onion (about 1/4 small onion)
  • 3 Tbsp water
  • 5 Tbsp honey or maple syrup
  • 4 Tbsp olive oil
  • 3 Tbsp vinegar (apple cider or white wine vinegar)
  • 1-2 pinches of salt
  • 1 tsp minced garlic

Cooking Instructions

Step 1

First, thoroughly wash the potatoes. Peel them and cut them into large, 2-3 cm cubes. Place the cubed potatoes in a pot, cover them with water, add about 1/2 tsp of salt, and bring to a boil over high heat. Once boiling, reduce the heat to medium-low and cook for about 15-20 minutes, or until the potatoes are tender when pierced with a fork.

Step 2

While the potatoes are cooking, let’s make the delicious and healthy natural mayonnaise. In a blender or food processor, combine all the mayonnaise ingredients: 100g cashews and peanuts, 25g onion, 3 Tbsp water, 5 Tbsp honey or maple syrup, 4 Tbsp olive oil, 3 Tbsp vinegar, 1-2 pinches of salt, and 1 tsp minced garlic. Blend until smooth and creamy. Your homemade natural mayonnaise is ready!

Step 3

Drain the cooked potatoes thoroughly in a colander. It’s best to mash the potatoes while they are still hot, as they will be smoother and easier to mash.

Step 4

Finely mince the king oyster mushroom. Lightly grease a pan and sauté the minced mushroom over medium heat until it’s lightly golden brown. This adds a pleasant texture and flavor. You can also add other finely diced vegetables like carrots, onions, or bell peppers if you like.

Step 5

Peel, core, and finely dice the apple. To prevent browning, toss the diced apple immediately with a little of the natural mayonnaise sauce. This will keep its color vibrant and help it blend well with the other ingredients.

Step 6

Wash the cherry tomatoes and remove their stems, then finely dice them. If you prefer a softer texture, you can blanch them in hot water, peel, and then dice them. They will add a refreshing touch to the salad.

Step 7

Now it’s time to bring everything together! Place the mashed potatoes in a bowl while still warm. Add a generous amount of your homemade natural mayonnaise. This mayonnaise is rich in flavor but not greasy, so don’t be shy! Add the sautéed king oyster mushrooms, diced apple, and diced cherry tomatoes. Using a spatula or fork, gently mix everything together until well combined and creamy, ensuring there are no large lumps of potato. Your delicious mashed potato salad is now complete!
