On a rainy day, for a late-night snack, or when hosting guests, a magical dish you can whip up in no time is fish cake soup. The chewy fish cakes combined with a clear, refreshing broth create a taste that rivals any izakaya. Not only is it visually appealing, but it’s also guaranteed to be delicious. How about a bowl of fish cake soup that delights both your eyes and your palate?
Essential Ingredients
- Assorted fish cakes, 1 pack (choose according to preference)
- Clear broth for a refreshing taste, 7 Tbsp (or kelp broth)
- Radish for sweetness, 5cm piece
- Enoki mushrooms for chewy texture, 1 handful
- Scallions for aroma, 1 stalk
- Onion for sweetness, 1/2
- Fresh chives, 1 handful
- Cheongyang chili pepper for a spicy kick, 1
- Tofu pouches (pre-made), 4 (optional)
Cooking Instructions
Step 1
Fresh ingredients are the foundation of great fish cake soup! Fish cakes, aromatic scallions, sweet radish, and a clear broth are essential. Adding a bit of minced garlic will amplify the umami. Using leftover vegetables or mushrooms from your fridge can make your fish cake soup even more abundant.
Step 2
Cut the fish cakes into bite-sized pieces. You can cut them large, or into smaller pieces for children to eat easily. Using various shapes of fish cakes will make the soup look more appealing.
Step 3
Thinly slice the fresh radish, which is responsible for the soup’s refreshing and clear flavor. Thin slices will allow the flavor to infuse well into the broth, and they will become tender when cooked. If you don’t have radish, you can use a little grated radish.
Step 4
Cut the scallions into large pieces to add a deep flavor to the broth. The white parts of the scallions add a refreshing taste, while the green parts add aroma. Cutting them large makes them easy to pick out and eat.
Step 5
Adding pre-made tofu pouches (aburaage stuffed with other ingredients) will add a chewy texture and make the broth even richer. You can use tofu pouches often used for udon or ramen, or even homemade ones if you have them. (This is optional, so it’s okay if you don’t have them!)

Now it’s time to arrange the fish cakes beautifully. Place your favorite fish cakes evenly and attractively in the pot. Mixing various shapes and types of fish cakes will make it look even more delicious.
Step 7
Add 7 Tbsp of clear broth for a refreshing taste, and pour in 700ml of water. (The recipe states 100ml, but I adjusted it to 700ml considering the pot size.) You can also use anchovy-kelp broth instead of commercial broth. Taste and adjust seasoning; add a little soy sauce or salt if needed.
Step 8
Add all the ingredients and bring to a rolling boil over high heat. Once the broth boils, reduce the heat to medium-low and simmer for about 5-10 minutes until the ingredients are cooked through and the flavors have melded. Garnish with crown daisy or other toppings for an even more elegant presentation.
