Main Ingredients
- 1kg Rapeseed Greens (Yu Chae Namul) (Choose fresh, young leaves)
- 1 Onion (thinly sliced)
- 1/2 Carrot (julienned thinly)
Seasoning Ingredients (for Blender)
- 1/2 Onion
- 50g White part of Leek
- 2 Tbsp Fish Sauce
- 1.5 Tbsp Salted Shrimp (minced)
- 3 Tbsp Plum Extract (Maesil Cheong)
- 1 clove Garlic (minced)
- 5 cloves Ginger (minced)
Overall Seasoning
- 1/2 cup Gochugaru (Korean chili flakes, adjust to taste)
- 1 Tbsp Brown Sugar
- 1 Tbsp Dried Shiitake Mushroom Powder (adds umami)
- 1 Tbsp Toasted Sesame Seeds (for nutty aroma)
- 1/2 Onion

Cooking Instructions
Step 1
First, prepare your fresh rapeseed greens. If you’ve grown them yourself, they’ll be extra vibrant!

Gently wash the rapeseed greens under cold running water about 3 times. It’s important to rinse them thoroughly to remove any dirt or grit. After washing, drain them completely to remove excess moisture.
