- 60g Dried Pollack (shredded)
- 10 Korean Green Peppers
- 6 cloves Garlic
- 1 stalk Green Onion (white part mainly)
- 1 Tbsp Cooking Oil
- 1 tsp Sesame Oil
- 1 tsp Toasted Sesame Seeds
Flavorful Sauce
- 1.5 Tbsp Soy Sauce (Korean Guk-ganjang)
- 1 Tbsp Sugar
- 0.5 Tbsp Oyster Sauce
- 1.5 Tbsp Soy Sauce (Korean Guk-ganjang)
- 1 Tbsp Sugar
- 0.5 Tbsp Oyster Sauce
Cooking Instructions
Step 1
Briefly dip the shredded dried pollack in water, then immediately squeeze out all excess moisture. (Important! Soaking for too long will make the pollack soggy and diminish its texture and flavor.)
Step 2
Cut the squeezed dried pollack into bite-sized pieces, about 2-3 cm in length, using scissors or a knife.
Step 3
Slice the green onion thickly on an angle. Thinly slice the garlic. Cut the Korean green peppers into 3 pieces each. (If you enjoy a spicier kick, you can add some Korean chili peppers at this stage.)
Step 4
Heat a frying pan over medium heat and add the cooking oil. Add the sliced green onions and garlic, and stir-fry until the garlic is golden brown and fragrant. This step infuses the oil with a rich aroma and flavor.
Step 5
Once the garlic is cooked, add the prepared dried pollack to the pan. Stir-fry over medium-high heat for about 1-2 minutes, coating the pollack with the oil.

Sprinkle the sugar (1 Tbsp) over the pollack in 2-3 portions while stir-frying. (Adding sugar gradually prevents it from clumping and ensures it evenly coats the pollack, creating a delightful caramelization.)

Now, add the Korean green peppers and stir-fry them together. (For a crispier pepper texture, add them towards the end. If you prefer softer peppers, you can add them now and cook them through.)

Pour in the sauce mixture (1.5 Tbsp soy sauce + 0.5 Tbsp oyster sauce) in 2-3 additions, stir-frying quickly to combine. Dried pollack absorbs sauce very rapidly, so swift mixing is key to prevent burning and ensure even seasoning! (Be careful not to burn the ingredients.)
Step 9
When most of the moisture has evaporated and the ingredients are well combined, turn off the heat. Finally, stir in the sesame oil (1 tsp) and toasted sesame seeds (1 tsp) for a perfect finish. Your delicious Dried Pollack and Korean Green Pepper Stir-fry is ready!
