Main Ingredients
- 2 ripe tomatoes
- 1/2 block firm tofu (approx. 150g)
- Filling from 2 large pork dumplings (approx. 100g)
- 2 fresh eggs

Cooking Instructions
Step 1
Wash the tomatoes thoroughly, remove the cores, and roughly scoop out the seeds. Finely dice the tomatoes. If too much juice comes out, gently press to drain some of it.

Squeeze the tofu firmly by hand using cheesecloth or paper towels to remove as much water as possible. This step is crucial for a well-textured pancake. Place the squeezed tofu in a bowl, then add the diced tomatoes, fresh eggs, dumpling filling, chopped green onion, starch, and salt.

Gently mix all the ingredients in the bowl with a spatula or spoon until just combined to form a batter. Avoid overmixing; just ensure everything is incorporated. The batter will have a lovely color thanks to the tomatoes.

Heat 2 Tbsp of olive oil in a frying pan over medium-low heat. Drop spoonfuls of the batter onto the pan, forming small pancakes. You can adjust the size as you prefer. Aim for a moderate thickness so they cook through evenly and have a pleasant texture.

Once the edges of the pancakes start to turn golden brown, carefully flip them over with a spatula. Cook the other side until it’s also golden brown and slightly crisp. Adjust the heat as needed to prevent burning while ensuring they are cooked through.
