Homemade Classic Madeleine Recipe with Perfect Ratios

Basic Ingredients (Makes approx. 10)
- 74g room temperature eggs (approx. 1.5 eggs)
- 65g granulated sugar
- 6g honey (liquid)
- 1/2 tsp vanilla extract
- 55g cake flour (low-gluten flour)
- 26g finely ground almond flour
- 2g baking powder
- 75g unsalted butter, melted (and cooled to approx. 50-60°C)
- 7g milk
Cooking Instructions
Step 1
In a bowl, combine the room temperature eggs, granulated sugar, and honey. Whisk gently with a hand whisk or balloon whisk just until the ingredients are evenly incorporated. Avoid over-whipping, as this can cause the madeleines to puff up too much or crack unevenly.
Step 2
Sift the cake flour, almond flour, and baking powder together directly into the bowl. Sifting helps to create a smooth batter without lumps and ensures the baking powder is evenly distributed for a consistent rise.
Step 3
Pour the warm melted unsalted butter (around 50-60°C), milk, and vanilla extract into the bowl. Gently fold everything together with a spatula until just combined and no dry streaks remain. Be careful not to overmix.
Step 4
Cover the bowl with plastic wrap and refrigerate the batter for at least 1 hour to rest. This resting period allows the gluten to relax and the flavors to meld, resulting in a more tender and flavorful madeleine. (Chilling overnight is also highly recommended for optimal texture.)
Step 5
Remove the chilled batter from the refrigerator. Gently loosen it with a spatula or whisk until it’s smooth and pourable, being careful not to develop the gluten. Keeping the batter cold helps maintain its shape during baking.
Step 6
Pipe or spoon the batter into your prepared madeleine molds (greased or lined with parchment paper), filling each mold about 80-90% full. Overfilling can cause the batter to overflow during baking.
Step 7
Bake in a preheated oven at 180°C (350°F) for 10-12 minutes. The madeleines are ready when they have a beautiful golden-brown color and the edges look slightly crisp. Baking time may vary depending on your oven.
Step 8
Carefully remove the baked madeleines from the molds and let them cool completely on a wire rack. While delicious warm, they achieve their best chewy texture once fully cooled.
