Main Ingredients
- 2/3 cup dried seaweed (cut)
- 1 ripe tomato
- 1/2 cucumber
- 2 sticks imitation crab meat (or surimi sticks)
Seasoning Ingredients
- 1.5 Tbsp soy sauce
- 2 Tbsp vinegar
- 1 Tbsp rice wine (mirin)
- 0.5 Tbsp sugar
- A drizzle of sesame oil
- A pinch of toasted sesame seeds
- 1.5 Tbsp soy sauce
- 2 Tbsp vinegar
- 1 Tbsp rice wine (mirin)
- 0.5 Tbsp sugar
- A drizzle of sesame oil
- A pinch of toasted sesame seeds
Cooking Instructions
Step 1
First, rehydrate the dried seaweed by soaking it in cold water for about 15 minutes until it becomes soft and pliable. This step is crucial for achieving the perfect chewy texture.
Step 2
Once the seaweed is rehydrated, blanch it in boiling water for just about 30 seconds. Be careful not to overcook it, as it can become mushy. Immediately rinse the blanched seaweed under cold water to stop the cooking process and cool it down. Gently squeeze out any excess water. Removing excess water ensures the dressing adheres well and the salad isn’t watery.
Step 3
Now, let’s prepare the other ingredients. Wash the cucumber thoroughly, remove the seeds if desired, and julienne it into thin strips (about 0.3 cm thick). Core the tomato and cut it into bite-sized pieces. Shred the imitation crab meat into manageable pieces.
Step 4
It’s time to make the delicious dressing! In a clean bowl, combine 1.5 tablespoons of soy sauce, 2 tablespoons of vinegar, 1 tablespoon of rice wine (mirin), and 0.5 tablespoon of sugar. Whisk everything together until the sugar is completely dissolved, creating a well-balanced dressing.
Step 5
Finally, in a large mixing bowl, add the blanched seaweed, julienned cucumber, chopped tomato, and shredded imitation crab meat. Pour the prepared dressing over the ingredients. Drizzle in a little sesame oil and sprinkle with toasted sesame seeds. Gently toss everything together until all the ingredients are evenly coated with the dressing. Avoid overmixing to prevent the ingredients from breaking apart. Your refreshing Tomato and Seaweed Salad is now ready to be served and enjoyed!
