Tofu Kimchi Fried Rice: A Healthy & Delicious Low-Carb Diet Recipe

Reducing carbohydrate intake within your daily meals can significantly help with weight loss. I’m going to make a low-carb, low-calorie kimchi fried rice using tofu, which I often use instead of rice. How delicious is this tofu kimchi fried rice, stir-fried until fluffy and dry? It tastes just like regular kimchi fried rice, with only a slightly different texture. By swapping just one ingredient in your regular diet, you can create a fantastic diet meal. There’s just a fine line between a regular meal and a diet meal! Let’s diet while eating heartily and deliciously 🙂
Main Ingredients
- A generous portion of well-fermented kimchi (about 1 cup)
- 1 block of firm tofu (approx. 300g)
- 1/2 medium onion
Seasoning & Flavor
- 1 Tbsp sesame oil
- 1 Tbsp toasted sesame seeds

Cooking Instructions
Step 1
Finely mince the kimchi and onion. Rinse the kimchi briefly under running water to drain excess liquid, then chop it finely. (Tip: Using kimchi that isn’t too sour will yield a better flavor in the fried rice.) If you have chopped green onions, mince them now and prepare them to add for enhanced flavor.
Step 2
Heat a non-stick pan over medium-low heat. Add the minced kimchi and onion without any oil and begin to stir-fry. (Tip: If you prepared green onions, add them now and sauté together.) It’s important to stir-fry until the moisture from the kimchi has evaporated.
Step 3
When most of the moisture from the kimchi and onion has evaporated and the mixture starts to lightly stick to the bottom of the pan, drizzle in 1 Tbsp of sesame oil and add the tofu. (Tip: Press the tofu firmly with paper towels to remove as much water as possible; this prevents the fried rice from becoming soggy.)
Step 4
Add the tofu in a block, then use a spatula to break it apart and mash it as you stir-fry. Continue to cook over medium-low heat until the tofu’s moisture has completely evaporated and it becomes crumbly and fluffy. Once it starts to lightly brown and stick to the pan, turn off the heat and finish.
Step 5
For an extra touch of flavor, consider using a kitchen torch to lightly sear the surface, imparting a smoky aroma. (Tip: If you don’t have a torch, simply letting it brown slightly in the pan will still result in a delicious dish.)
