Easy & Delicious Stir-fried Shredded Potatoes: A Family Favorite!

I absolutely love potatoes, and having a potato side dish is enough to finish a whole bowl of rice! This stir-fried shredded potato dish is a huge hit with my husband and 7-year-old son. I’ll even share my secret tips for making it extra special! ^^

Main Ingredients
  • 3 medium potatoes
  • 1/4 onion
  • 1/4 carrot
  • 1 Tbsp butter
  • 1 Tbsp coarse sea salt
  • Pinch of black pepper
  • 2 Tbsp cooking oil
  • 1/2 Tbsp toasted sesame seeds

Cooking Instructions

Step 1

First, prepare the 3 medium potatoes. Use a peeler or knife to remove the skins, then rinse them under running water and pat dry. This ensures a clean preparation.

Step 2

Slice the peeled potatoes into thin shreds, about 5mm thick. It’s important not to slice them too thinly, as they can break apart easily. This thickness will give you a pleasant texture.

Step 3

Place the shredded potatoes in a large bowl. Sprinkle 1/2 tablespoon of coarse sea salt over them and mix well. Let them sit for about 5 minutes to allow the salt to draw out moisture. This step is key to preventing the potatoes from becoming mushy when stir-fried.

Step 4

While the potatoes are salting, prepare the carrot. Slice 1/4 carrot into thin shreds, about 3mm thick. The carrot adds a lovely color and a subtle sweetness. Aim for a similar thickness to the potatoes for even cooking.

Step 5

Next, prepare the onion. Slice 1/4 onion into thicker shreds, about 7-10mm thick. As the onion cooks, it will release its natural sweetness, enhancing the overall flavor of the dish.

Step 6

Rinse the salted potato shreds under cold running water to remove excess salt. Drain them thoroughly in a colander. Make sure to get rid of as much water as possible, as excess moisture can cause splattering during cooking and make the potatoes soggy.

Step 7

Now it’s time to stir-fry. Heat a non-stick pan over high heat. Add the drained potato shreds to the hot pan, followed by 2 tablespoons of cooking oil. Stir-frying on high heat is crucial for maintaining a good texture.

Step 8

As you stir-fry the potatoes over high heat, they will begin to turn slightly translucent. At this point, add 1 tablespoon of butter. Stir continuously, ensuring the butter coats the potato shreds evenly until it’s fully melted and no butter pieces are visible. This step adds a wonderful buttery richness.

Step 9

Once the butter has coated the potatoes, add the shredded carrots and onions to the pan. Sprinkle with the remaining 1/2 tablespoon of coarse sea salt and a pinch of black pepper. Continue to stir-fry until the onions become translucent. You can adjust the salt to your taste preference.

Step 10

When all the ingredients are cooked and the onions are translucent, turn off the heat. Transfer the stir-fried shredded potatoes to a serving plate. Finally, sprinkle with 1/2 tablespoon of toasted sesame seeds for an extra nutty flavor. Enjoy this delicious side dish with a warm bowl of rice!
