Boiled Meat Ingredients
  • Pork shoulder or belly 1.2kg
  • Plain yogurt 15 individual cups (approx. 100ml each)
  • Water 400ml
  • Soy sauce (jin ganjang) 260ml

Lee Chan-won’s Special Ssamjang (Dipper)
  • Doenjang (soybean paste) 1.5 parts
  • Gochujang (chili paste) 1 part
  • Onion 1/4, finely minced
  • Green onion 1/2 stalk, finely minced
  • Minced garlic, a little
  • Sesame oil, a little
  • Toasted sesame seeds, a little

Cooking Instructions

Step 1

In a pot for boiling the pork, combine 400ml of water and 260ml of soy sauce. Add all 15 individual cups of plain yogurt. Stir to mix the ingredients thoroughly.

Step 2

Once the liquid in the pot begins to boil, carefully add the whole 1.2kg piece of pork. Ensure the meat is submerged in the liquid.

Step 3

While the pork is boiling, skim off any foam that rises to the surface using a spoon. This helps to create a clean broth and remove any unwanted odors. After skimming, reduce the heat to medium and cover the pot. Let it simmer gently for about 40 minutes.

Step 4

While the pork is cooking, let’s prepare the special ssamjang. Finely mince 1/4 onion and 1/2 green onion. In a bowl, combine the minced onion and green onion with 1.5 parts doenjang, 1 part gochujang, a little minced garlic, and a little sesame oil. Mix well until evenly combined. Finish by adding a little toasted sesame seeds for extra flavor.

Step 5

To check if the pork is fully cooked, insert a chopstick into the meat. If no red liquid comes out, it is done. If red liquid appears, continue boiling for a bit longer. Flip the meat occasionally during cooking to ensure even doneness.

Step 6

Once the pork is cooked, remove it from the pot and slice it into bite-sized pieces. Slicing them not too thick will result in a better texture. Arrange the slices attractively on a serving plate.

Step 7

Finally, sprinkle some toasted sesame seeds over the sliced pork to finish. This Lee Chan-won’s yogurt boiled pork, served with the homemade special ssamjang, is ready to be enjoyed. It looks as good as it tastes!
