Main Ingredients
  • Sliced Duck Meat 500g
  • 1 Onion
  • 1 handful of prepared Chives
  • 1 Red Chili Pepper (optional)
  • 10-12 cloves of Garlic (or 2 Tbsp minced garlic)
  • 1 Green Onion
  • A pinch of Sesame Seeds

Soy Sauce Bulgogi Marinade (Measurements: Tablespoons)
  • 4 Tbsp Soy Sauce
  • 1 Tbsp Oyster Sauce
  • 2 Tbsp Sugar
  • 2 Tbsp Cooking Wine (Mirin, etc.)
  • A pinch of Grated Ginger (optional)
  • A pinch of Black Pepper

Cooking Instructions

Step 1

First, prepare the vegetables. Thinly slice the garlic cloves, and julienne the onion. Slice the red chili pepper diagonally, and cut the green onion into about 4cm lengths. (The red chili pepper is optional; you can substitute it with a spicy green chili pepper if you prefer a bit of heat.)

Step 2

Now, let’s make the delicious soy sauce bulgogi marinade. In a large pan or bowl, place the sliced duck meat. Add a pinch of grated ginger, 2 Tbsp sugar, 2 Tbsp cooking wine, 4 Tbsp soy sauce, 1 Tbsp oyster sauce, and about 20 twists of freshly ground black pepper. Mix all the marinade ingredients well.

Step 3

If time permits, marinate the duck meat in the sauce for at least 30 minutes. Marinating allows the flavors to penetrate the meat deeply, resulting in a much more tender and flavorful duck bulgogi.

Step 4

Add all the prepared vegetables (except for the chives) to the marinated duck. Toss everything together gently to ensure the marinade coats both the meat and vegetables evenly. Make sure the vegetables are well combined with the duck and the sauce.

Step 5

Place the pan with the marinated meat and vegetables over medium heat on the stovetop. Once the pan is sufficiently preheated, add the duck and vegetables and begin to stir-fry them until deliciously cooked.

Step 6

As the duck cooks, some oil will be released, but the vegetables stir-fried alongside will absorb this oil, adding to the richness of the dish. Once the duck is evenly cooked and has a nice color, proceed to the next step.

Step 7

Finally, add the prepared chives and stir-fry them briefly until they are just slightly wilted. Be careful not to overcook the chives, as they can become mushy. Once the chives are lightly cooked, immediately turn off the heat to complete your delicious duck bulgogi. Enjoy it with a warm bowl of rice!
