Tender Pressure Cooker Radish Side Dish (Munamul)
Soft Pressure Cooker Radish Side Dish Your Whole Family Will Love
Hello! We believe that ‘rice power is national power.’ Autumn radishes are in season and absolutely delicious! Radishes contain a unique enzyme that aids digestion and abundant fiber that helps cleanse waste from the intestines. In traditional Korean medicine, they are often used for their fever-reducing properties and to soothe coughs and sore throats. Look for radishes that are plump towards the root and have green tops. Today, we’ll be making a wonderfully tender radish side dish using a pressure cooker.
Ingredients
- Radish 300g
- Salt 1/3 Tbsp
- Canola Oil 1 Tbsp
- Minced White Part of Green Onion 1 Tbsp
- Sugar 1 tsp
- Minced Garlic 1 tsp
- Water 1/3 cup
- Toasted Sesame Seeds 1 tsp
- Sesame Oil 1 tsp
Cooking Instructions
Step 1
First, wash the 300g of radish and slice it into 1cm thick, bite-sized pieces (nabak-썰기). Place the sliced radish in a bowl and sprinkle with 1/3 Tbsp of salt. Toss gently to coat and let it sit for 15 minutes to salt. Once the radish has released its water, firmly squeeze out any excess liquid without rinsing. (Squeezing it directly without rinsing helps the seasoning penetrate better and enhances the flavor.)
Step 2
Prepare the seasoning ingredients for the radish dish. In a bowl, combine 1 Tbsp canola oil, 1 Tbsp finely minced white part of green onion, 1 tsp sugar, 1 tsp minced garlic, 1/3 cup water, 1 tsp toasted sesame seeds, and 1 tsp sesame oil. Mix well to create the seasoning sauce.
Step 3
Now, it’s time to use the pressure cooker. Lightly coat the bottom of a 3L pressure cooker with 1 Tbsp of canola oil. Add the salted and squeezed radish and stir-fry it. Sauté until the radish becomes slightly translucent. Using a pressure cooker makes this step incredibly convenient as it prevents sticking! After stir-frying, pour in the prepared 1/3 cup of water.
Step 4
Close the pressure cooker lid and set the pressure to ‘Level 1’. Once the pressure starts to build (indicated by the whistle or gauge), cook for exactly 2 minutes. The powerful pressure from the cooker will cook the radish very tenderly in a short amount of time.
Step 5
Carefully release the pressure by gently lowering the pressure valve after 2 minutes. Open the lid to reveal the wonderfully soft and tender radish. Finally, add all the prepared seasoning sauce and gently toss to combine. Your delicious pressure cooker radish side dish is now complete! It’s especially wonderful served over a bowl of warm rice.
