How to Make Juicy Chicken Thigh Steak: A Perfect Dish for Appetizers or a Hearty Meal!
Today, we’ve made a delicious chicken thigh steak using tender chicken thigh meat. It’s wonderfully juicy and packed with flavor.
Main Ingredients
- 500g boneless, skinless chicken thighs
- 8-10 whole garlic cloves
- Pinch of black pepper
- Pinch of dried parsley (optional)
Special Steak Sauce
- 2.5-3 Tbsp soy sauce
- 3 Tbsp ketchup
- 1 Tbsp vinegar
- 2 Tbsp sugar
- 1 piece butter (approx. 10g)
- 1 Tbsp mirin (sweet rice wine)
- 200ml water

Cooking Instructions
Step 1
First, prepare the chicken thighs by removing any sinew or excess fat. Rinse them thoroughly under cold running water. If you are using frozen chicken thighs, after thawing, you can soak them in milk for about 10-15 minutes to remove any potential gamey smell, or marinate them briefly with a little mirin, black pepper, and ginger powder for extra flavor.
Step 2
Heat a pan over medium heat. Add the prepared chicken thighs, along with 3 Tbsp soy sauce, 3 Tbsp ketchup, 1 Tbsp vinegar, 2 Tbsp sugar, 1 piece of butter, 1 Tbsp mirin, and 200ml of water. Add the whole garlic cloves at this stage to enhance the aroma and flavor.
Step 3
Bring the mixture to a boil over high heat. Once the sauce starts bubbling, sprinkle in a pinch of black pepper to further enhance the chicken’s flavor profile.
Step 4
Once the butter has completely melted and blended into the sauce, reduce the heat to low. Cover the pan with a lid and let the chicken thighs simmer gently in the sauce until it thickens. This process tenderizes the chicken and allows the flavors to meld beautifully.
Step 5
As it simmers on low heat, you’ll notice the sauce gradually becoming thicker and more concentrated. I stopped cooking before it became too thick to ensure the chicken thighs remained moist and tender. Feel free to adjust the sauce consistency to your preference.
Step 6
This chicken thigh steak, slowly simmered over low heat, is incredibly flavorful as the sauce deeply penetrates the meat. My husband and son absolutely loved it, giving it two thumbs up throughout the meal! (My 6-year-old son especially enjoyed it and praised it multiple times!)
