Ingredients
  • 20cm Scallion (finely chopped)
  • 1 Large Egg
  • 1 Bowl of Cooked Rice
  • 1/10 Tbsp Salt
  • Pinch of Black Pepper

Cooking Instructions

Step 1

First, crack the large egg into a bowl. Add a pinch of salt and a pinch of black pepper to season it evenly. Whisk the egg gently with a fork or whisk until well combined.

Step 2

Heat a pan over low heat. Once warm, add cooking oil and sauté the chopped scallions for about 30 seconds to release their aroma. Then, increase the heat to medium. Add the cooked rice to the pan. Sprinkle 1/10 Tbsp of salt and a pinch of black pepper over the rice. Stir constantly to ensure the scallion flavor is evenly distributed throughout the rice.

Step 3

When the rice grains are coated with oil and look slightly glossy, gently push the rice to one side of the pan. Tilt the pan and add a little more cooking oil to the empty space. Pour in the whisked egg mixture. Quickly stir-fry the egg, scrambling it into small pieces as it cooks, making sure not to let it stick to the bottom of the pan.

Step 4

Once the scrambled eggs are softly set and still moist, turn off the heat. Gently mix the scrambled eggs with the rice until everything is well combined. Your delicious scallion and egg fried rice is now ready!

Step 5

Finally, you can garnish with a sprinkle of black sesame seeds or parsley flakes, if desired.
