Main Ingredients
  • 2 Chicken Breasts (thawed in refrigerator overnight or at room temperature)
  • 1 Green Onion
  • 1/4 head Cabbage (approx. 4 leaves, cut to bite-size)
  • 1/4 Carrot
  • 1 Onion

Spicy & Sweet Sauce
  • 1 Tbsp Minced Garlic
  • 1 Tbsp Gochujang (Korean chili paste)
  • 1 Tbsp Sugar
  • 2 Tbsp Soy Sauce
  • 2 Tbsp Gochugaru (Korean chili flakes)
  • 2 Tbsp Cooking Wine (Mirin or Cheongju)
  • Pinch of Black Pepper

Cooking Instructions

Step 1

Thaw the frozen chicken breasts by placing them in the refrigerator the night before cooking, or let them thaw at room temperature. This helps maintain a tender texture.

Step 2

Prepare all the vegetables. Cut the green onion in half lengthwise, then into approximately 5cm (2-inch) pieces. Peel the carrot and cut it into thin, long strips. Slice the onion thickly. Cut the cabbage into pieces similar in size to the onion.

Step 3

Slice the thawed chicken breasts into thick strips, about 1.5-2cm (0.6-0.8 inches) wide. In a bowl, combine the chicken breast strips with all the sauce ingredients (minced garlic, gochujang, sugar, soy sauce, gochugaru, cooking wine, black pepper). Mix well by hand. Let it marinate for about 10 minutes for better flavor.

Step 4

Heat a little cooking oil in a pan over medium-low heat. Add the sliced green onion and stir-fry until fragrant. Infusing the oil with green onion aroma enhances the dakgalbi’s flavor significantly.

Step 5

Once the green onion becomes translucent, add all the prepared vegetables (carrot, onion, cabbage) to the pan. Stir-fry together for about 2-3 minutes until the vegetables are slightly softened.

Step 6

Add the marinated chicken breast strips to the pan with the vegetables. Use chopsticks or a spatula to break apart the chicken pieces so they don’t stick together as you stir-fry.

Step 7

Pour about 5 tablespoons of water into the empty sauce bowl and swirl it around to rinse out any remaining sauce. Pour this into the pan. (Tip: Don’t waste any sauce! Scrape it out thoroughly; it adds great flavor and moisture.) Stir everything together until well combined and cooking.

Step 8

Once the chicken breast is fully cooked and the vegetables are tender, your delicious chicken breast dakgalbi is ready! Enjoy this fantastic dish, perfect as a side for rice or as a savory snack with drinks.
