Easy Pressure Cooker Soy Braised Pork Ribs Recipe for a Tender and Flavorful Dish
While many recipes for spicy braised pork ribs are popular, I decided to create a soy sauce-based version today. It’s incredibly tender with a deep, savory-sweet flavor that’s perfect for the whole family.
Main Ingredients
- 1.6kg pork ribs
- 1 medium sweet potato
- 1 medium potato
- 1 large onion
- 80g shiitake mushrooms
- 1 stalk green onion
- 2/3 bell pepper (using various colors adds visual appeal)
- 3 chili peppers (adjust to your spice preference)
- 10 whole garlic cloves
Soy Marinade
- 13 Tbsp soy sauce
- 9 Tbsp cooking wine (like Mirin)
- 8 Tbsp brown sugar (sweetness can be adjusted)
- 1 Tbsp corn syrup (for shine)
- 2/3 Tbsp minced ginger (essential for removing gamey odor)
- 2 Tbsp sesame oil (for nutty aroma)
- 1 Tbsp toasted sesame seeds (for garnish)
- 13 Tbsp soy sauce
- 9 Tbsp cooking wine (like Mirin)
- 8 Tbsp brown sugar (sweetness can be adjusted)

Cooking Instructions
Step 1
Begin by soaking the pork ribs in cold water for 1 hour to remove any blood. Properly draining the blood is key to a clean, delicious flavor without any gamey smell.
Step 2
After soaking, rinse the pork ribs thoroughly under running water. Then, blanch them in boiling water for about 10 minutes. This step helps remove impurities and makes the meat even more tender.
Step 3
Time to prepare the vegetables! Chop the onion into large, bite-sized pieces, similar in size to the meat. Slice the green onion diagonally to release its aroma. Cut the bell pepper into large chunks for color. Peel and cut the potato and sweet potato into bite-sized pieces, rounding off the edges. Slice the shiitake mushrooms to match the size of the meat.
Step 4
Rinse the blanched pork ribs again under running water to remove any remaining impurities. If the ribs are thick, lightly score them with a knife to help the marinade penetrate better. This step ensures the flavors infuse deeply into the meat.
Step 5
Now, let’s use the pressure cooker! Place the pork ribs at the bottom of the pot and pour in all the prepared soy marinade. Add 800ml of water, cover with the lid, and cook under pressure until tender. Once the pressure cooker starts to whistle, reduce the heat and cook for another 3-5 minutes, then turn off the heat and let it rest until the pressure naturally releases. This process makes the ribs incredibly tender.
Step 6
Once the ribs are tender, it’s time to braise them. Open the pressure cooker lid and add the prepared potatoes, sweet potatoes, and shiitake mushrooms. Simmer over medium-high heat for about 10 minutes, or until the sauce has slightly reduced. This allows the vegetables to absorb the delicious flavors.
Step 7
Finally, add the chili peppers and the remaining vegetables (onion, green onion, bell pepper) to the pot. Continue to simmer for another 5-7 minutes. The sauce will thicken beautifully, and the vegetables will add a wonderful sweetness and aroma, completing the dish.
Step 8
Just before turning off the heat, stir in 2 tablespoons of sesame oil for a nutty aroma. Mix well, then garnish with 1 tablespoon of toasted sesame seeds. Your delicious and tender Soy Braised Pork Ribs are ready to be enjoyed with a steaming bowl of rice!
